Coconut French Toast will bring a tropical vibe to your breakfast table. It is the perfect combination of a creamy interior with a crispy exterior.

Servings: 4 servings
Ingredients
  • 4-6 slices day old white bread
  • 4 eggs
  • ½ cup coconut milk (from a can)
  • ½ cup coconut flakes, unsweetened
  • butter for frying
  • maple syrup, berries and mango for serving
Instructions
  1. Stir together the eggs and coconut milk in a shallow bowl. Add the shredded coconut to another bowl.

  2. Dip the bread on both sides in the egg mixture and then in the coconut flakes.

  3. Heat a nonstick pan on medium high heat. Add a little butter to the pan and fry the French toast until golden brown on both sides.

  4. Serve with maple syrup, berries and mango.
