- White bread, day old and thick slices
- Eggs, preferably organic
- Coconut milk (from a can)
- Coconut flakes, unsweetened
- Butter for frying

Instructions
- Stir together the eggs and coconut milk in a shallow bowl. Add the shredded coconut to another bowl.
- Dip the bread on both sides in the egg mixture and then in the coconut flakes.
- Heat a nonstick pan on medium high heat. Add a little butter to the pan and fry the French toast until golden brown on both sides.
- Serve the French toast hot with maple syrup, fresh berries and mango.

You want a bread that is sturdy enough to hold up well when soaked in the egg mixture without falling apart. It is better to use day old bread that is starting to go just a little stale, it will soak top the egg mixture better. Cut the bread in thick slices, this makes it easier to soak, cook and flip. I think we all had the accidental over soaking of french toast and ended up breaking the slice of bread when lifting it from the bowl to the pan… I would not recommend using a very soft or fresh white bread, it soaks up a lot of moisture and the french toast can end up a little soggy in the middle or fall apart.
