Baked sweet potato slices

These Baked sweet potato slices make a great side dish to any dinner. They are roasted in the oven until slightly caramelised, the best combo of sweet with a hint of spice, and lots of herbs.

Ingredients
  • 2 large sweet potatoes, about 2 lb (900g)
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon garlic powder
  • ¼ teaspoon red chili flakes (optional)
  • 2 tablespoons parsley, chopped
Instructions
  1. Preheat the oven to 200C (400F) and line a baking sheet with parchment paper, or brush with a little oil.
  2. Peel and cut the sweet potato into large slices, about ½ inch (1 cm) thick. Add them to the prepared baking sheet.

  3. Top with the olive oil, maple syrup and spices. Stir well until the sweet potatoes are evenly coated and spread out in a single layer.

  4. Roast the sweet potatoes, flipping the slices once, for about 20-30 minutes, or until lightly caramelised and fork tender, but not mushy. The maple syrup will caramelise, and if baked too long it can start to burn. So keep a close eye on the oven at the end of roasting.

  5. Top with fresh chopped parsley, some more salt and pepper if desired and serve immediately while hot. Enjoy!
