Roasted sweet potato slices make a great side dish for any holiday table. The combination of sweet and a little spicy is so tasty. Packed with spices like rosemary and thyme and a hint of garlic.
This recipe for baked sweet potato slices is also super easy to make in just one baking tray, for minimal cleanup and dishes!

These oven baked sweet potatoes slices are easy to make with a few, pantry ingredients, listed below.

- Sweet potato, peeled and sliced into ½ inch slices.
- Olive oil, or other oil of choice, avocado oil is another healthy alternative.
- Honey or maple syrup for a vegan dish. Gives these oven baked sweet potato slices a slight caramelised outside that tasted amazing pared with the spices.
- Spices, salt, black pepper, dried thyme, dried rosemary, garlic powder and red chili flakes.
- Parsley, optional, but a little chopped parsley tastes great as a topping.

Instructions
These oven roasted sliced sweet potatoes are easy and fast to make. Follow the instruction below with step-by-step photos. For the full written instructions, see the recipe card at the bottom.
- Step 1: Peel and cut the sweet potato into large slices. Add them to the prepared baking sheet.
- Step 2: Top with the olive oil, maple syrup and spices.
- Step 3: Stir well until the sweet potatoes are evenly coated and spread out in a single layer.
- Step 4: Roast the sweet potatoes, flipping the slices once, until lightly caramelised and fork tender, but not mushy.
Top with fresh chopped parsley, some more salt and pepper if desired and serve immediately while hot.
Hint: The maple syrup will caramelise, adding a wonderful taste to these roasted sweet potato slices. But keep an eye on the oven at the end of roasting, so ie doesn’t burn.

Substitutions and variations
- Herbs – this sweet potato recipe uses dried thyme and rosemary, fresh herbs can also be used. They are also topped with some chopped fresh parsley but fresh thyme or rosemary are other great options.
- Spicy – These roasted sweet potato slices have a little chili flakes added. If you like a spicier side dish, add more chili flakes to taste.
- Oil – Instead of olive oil, avocado oil is a great alternative.
- Sweet potato – The star and main ingredient of this dish. You can also use white or purple sweet potato. In this recipe I have peeled them, but the peel can also be left on.
- Vegan – To make this healthy baked sweet potato slices vegan, use maple syrup instead of honey. All other ingredients are vegan already.

- Sauce, serve with a drizzle of this creamy Maple Tahini Dressing.
- Nuts, add some pecans or roasted pumpkin seeds for a crunchy topping.

- Dried cranberries, scatter over some sweet and tart cranberries.

Storage
Any leftover roasted sweet potato slices can be stored in an airtight container in the fridge for 4-5 days.
The potatoes can also be frozen for about 4 months.
Top Tip
These are my best tips for the perfect crispy roasted sweet potatoes:
- To make these oven roasted sliced sweet potatoes, I used two sweet potatoes. Try to get ones that are even size, and long and skinny, for smaller slices that will bake more evenly.
- Cut the sweet potatoes in as even slices as possible. Aim for about ½ inch sized slices.
- Coat the sweet potato evenly with the olive oil and spices.
- Spread out the sweet potatoes in one, even layer. This way they will bake evenly on all sides, for a crispy exterior. If necessary use 2 baking trays for them to bake in a single layer.

- 2 large sweet potatoes, about 2 lb (900g)
- 2 tablespoons olive oil
- 2 tablespoons honey or maple syrup
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon garlic powder
- ¼ teaspoon red chili flakes (optional)
- 2 tablespoons parsley, chopped

Preheat the oven to 200C (400F) and line a baking sheet with parchment paper, or brush with a little oil.

Peel and cut the sweet potato into large slices, about ½ inch (1 cm) thick. Add them to the prepared baking sheet.

Top with the olive oil, maple syrup and spices. Stir well until the sweet potatoes are evenly coated and spread out in a single layer.

Roast the sweet potatoes, flipping the slices once, for about 20-30 minutes, or until lightly caramelised and fork tender, but not mushy. The maple syrup will caramelise, and if baked too long it can start to burn. So keep a close eye on the oven at the end of roasting.

Top with fresh chopped parsley, some more salt and pepper if desired and serve immediately while hot. Enjoy!
