This Berry Breakfast Crumble is the perfect, easy meal prep breakfast or healthy dessert. Served for breakfast with a little yoghurt and a drizzle of maple syrup, or for dessert a scoop of vanilla ice cream.

Servings: 6 servings

Ingredients
  • 4 cups (600g) mixed berries, frozen or fresh
  • 1 tablespoon chia seeds
  • 2 tablespoons brown sugar or coconut sugar
Topping
  • 1 cup (100g) rolled oats
  • ½ cup (50g) almond flour
  • 4 tablespoons coconut oil, melted or butter
  • 2 tablespoons (25g) brown sugar
  • 1 teaspoon ground cinnamon
  • pinch salt
Instructions
  1. Preheat the oven to 350F (175C) and lightly grease a 8×8 baking dish.
Berry filling
  1. In a mixing bowl, stir together the berries with the brown sugar until well coated. Add the filling to the prepared baking dish.

The streusel topping
  1. Add all the ingredients for the streusel to the mixing bowl. Stir together well with a spoon or use your fingers to pinch everything together.
  2. Top the berry filling with the crumble and bake for about 40 minutes to golden brown and the apples are nice and soft. If the crumble starts getting dark, cover it loosely with some foil.

  3. I like to serve with a little vanilla yoghurt, or if you are having this as a dessert, a scoop of ice cream is also really good.
