Creamy Chocolate Almond Milk Pudding that's really easy to make. Full of rich, chocolate flavor and with a silky smooth texture, this vegan pudding is a family favourite.

Servings: 4 servings
Ingredients
  • 3-4 tablespoon coconut sugar
  • 2 tablespoon cornstarch
  • 2 cups almond or coconut milk
  • 130g dark chocolate (dairy free for vegan)
  • 1 teaspoon vanilla or instant coffee powder
  • pinch of salt
  • 1 tbsp (25g) Vegan butter or normal for non vegan
Instructions
  1. Add the sugar and corn starch to a small saucepan. Stir to combined then slowly add in the milk while whisking until smooth.

  2. Heat over medium heat, stirring continuously, until it bubbles up and thickens.

  3. Take it off the heat and add in the chocolate, stir until the chocolate is melted and completely combined.

  4. Add the vanilla, pinch of salt and butter. Stir until smooth and glossy.

  5. Pour into serving dishes, cover and place in the fridge to set for a minimum of 2 hours.

  6. For serving, add a dollop of coconut whipped cream, fresh berries and some chocolate flakes if desired.
