Chocolate chip cookies with pecans and cranberries

Ingredients
  • 125 g butter at room temperature
  • 70 g (½ cup) dark brown sugar
  • 90 g (½ cup) sugar
  • 1 egg
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla paste
  • 210 g all-purpose flour
  • ½ teaspoon baking soda
  • 150 g good quality dark chocolate chopped and ⅓ reserved
  • 1 handful (50 g) chopped pecans
  • 70 g dried cranberries
  • pinch of salt
Instructions
  1. Pre-heat the oven to 175C (350F)

    Using an electric mixer, beat the sugars and butter together until light and fluffy.

    Add the vanilla, eggs and maple syrup/honey and mix until incorporated.

    Mix the flour, baking soda and salt in a separate bowl and add to the butter mixture. Stir until just incorporated and fold in the chocolate, pecans and cranberries.

    Roll the batter into balls and place on a parchment paper lined cookie sheet. Top with reserved chocolate pieces and bake for 10-12 minutes.
