Chocolate chip cookies with pecans and cranberries are the perfect holiday cookie. Like any great cookie, it is crispy on the edges and soft and chewy on the inside. This cookie is also filled with lots of chocolate, pecans and tart, chewy cranberries to give it balance.
Ingredients to make these Chocolate chip cookies with pecans and cranberries:
- Butter at room temperature
- Dark brown sugar
- Sugar
- Egg
- Maple syrup or honey
- Vanilla paste or vanilla extract
- All-purpose flour
- Baking soda
- Good quality dark chocolate
- Chopped pecans
- Dried cranberries
- Pinch of salt
Instructions:
- Pre-heat the oven and line a baking tray with parchment paper.
- Using an electric mixer, beat the sugars and butter together until light and fluffy. Add the vanilla, eggs and maple syrup/honey and mix until incorporated.
- Mix the flour, baking soda and salt in a separate bowl and add to the butter mixture. Stir until just incorporated and fold in the chocolate, pecans and cranberries.
- Roll the batter into balls and place on a parchment paper lined cookie sheet. Top with reserved chocolate pieces and bake.

- 125 g butter at room temperature
- 70 g (½ cup) dark brown sugar
- 90 g (½ cup) sugar
- 1 egg
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla paste
- 210 g all-purpose flour
- ½ teaspoon baking soda
- 150 g good quality dark chocolate chopped and ⅓ reserved
- 1 handful (50 g) chopped pecans
- 70 g dried cranberries
- pinch of salt

Pre-heat the oven to 175C (350F)
Using an electric mixer, beat the sugars and butter together until light and fluffy.
Add the vanilla, eggs and maple syrup/honey and mix until incorporated.
Mix the flour, baking soda and salt in a separate bowl and add to the butter mixture. Stir until just incorporated and fold in the chocolate, pecans and cranberries.
Roll the batter into balls and place on a parchment paper lined cookie sheet. Top with reserved chocolate pieces and bake for 10-12 minutes.
