Chocolate Pecan Quinoa Bites
Ingredients
  • 1 cup dates, firmly packed
  • 1 cup pecans
  • 3 tablespoon cocoa powder
  • 2-3 tablespoon peanut butter
  • 1 tablespoon maple syrup or honey
  • 4 tablespoon puffed quinoa
  • pinch of salt
  • optional topping: Melted dark chocolate and puffed quinoa
Instructions
  1. Start by soaking the dates in hot water for 10 minutes. Drain and add all the ingredients to a food processor. Mix until it all comes together to a dough.

    Roll into balls and refrederate for one hour. Top with a drizzle of melted dark chocolate and some puffed quinoa.

    Store in an airtight container in the fridge for one week.
