These easy to make Chocolate Pecan Quinoa Bites might taste like dessert, but they are healthy, refined sugar free, naturally gluten-free and vegan!
They are easy to whip up in your food processor using just a few ingredients. They are sweetened with dates and a little maple syrup.
Ingredients to make these Chocolate Pecan Quinoa Bites:
- Dates, preferably medjool dates since they have more of a caramel flavour
- Pecans
- Cocoa powder, unsweetened
- Peanut butter, I use all natural. You can use another kind of nut butter as well.
- Maple syrup or honey
- Puffed quinoa
- Pinch of salt
- Optional topping: Melted dark chocolate and puffed quinoa
Instructions:
Start by soaking the dates in hot water for 10 minutes. Drain and add all the ingredients to a food processor.
Mix until it all comes together to a dough. Roll into balls and refrederate for one hour.
Top with a drizzle of melted dark chocolate and some puffed quinoa. Store in an airtight container in the fridge for one week.
