Coconut salted caramel bliss balls

These healthy Coconut salted caramel bliss balls are really easy to make! Just a few pantry ingredients and you have yourself a great snack.

Ingredients
  • 1 cup (220g) dates, pits removed
  • ½ cup coconut cream
  • 2 ¾ cup (250 g) unsweetened shredded coconut and more for coating
  • pinch of salt
  • optional, freeze dried berry powder for color.
Instructions
  1. Soak the dates in hot water for 10 minutes. Drain the water and add the dates to a high speed food processor. Mix until smooth then add the remaining ingredients except for the superfood powders. Pulse until just combined.

  2. Scoop out about 1 tablespoon and roll into balls. Coat them in coconut. If desired, mix in a little freeze dried berry powder with the coconut. This is optional but I love the flavour and color.

  3. Place in the fridge for at least 1 hour to set, then store in an airtight container in the fridge.
