Coconut Salted Caramel Bliss Balls

These Coconut salted caramel bliss balls are really easy to make and full of coconut and salted caramel flavour. All you need is just a few pantry ingredients and you have yourself a healthy snack that will also satisfy your sweet tooth. The dates gives these bliss balls a great caramel flavour without any refined sugar.

Coconut Caramel Bliss Balls

All you need to make these Coconut salted caramel bliss balls are:

  • Dates, preferably medjool dates since they have more of a caramel flavor
  • Coconut cream, the thick part of a can of coconut milk that has been chilled in the fridge over night.
  • Unsweetened shredded coconut, also called desiccated coconut
  • Pinch of salt, because it gives them a salted caramel vibe which I looove!
  • Optional for color, freeze dried berry powders. 1 teaspoon is usually enough for some nice color and flavour.

Instructions:

Soak the dates in hot water. Drain the water and add the dates to a high speed food processor. Mix until smooth, then add the remaining ingredients except for the freeze dried berry powders, if using them. Pulse until just combined.

Scoop out about 1 tablespoon and roll into balls. Coat them in coconut. If desired mix in a little freeze dried berry powder. This is optional but I love the flavour and color.

Place in the fridge for at least 1 hour to set, then store in an airtight container in the fridge.

How to store bliss balls:

Store these coconut salted caramel bliss balls in an airtight container, in the fringe. they keep for up to 5 days, but I doubt they will last that long!

Top tips:

Coconut; this recipe works best with unsweetened finely shredded coconut, also called desiccated coconut. I do not recommend using the sweetened kind, the dates make them sewn enough. For a twist you can also toast the coconut before adding to the food processor, really brings out the coconut flavour!

Dates, which ones to choose? These quite a bid difference in the quality of dates. Fore this recipe I recommend medjool dates. They are bigger, and softer and have more of a caramel flavour then the normal ones. But I have made this bliss balls using normal dates, they still tases great, but have less of a caramel flavour.

For an extra treat, you can also cover these balls in melted chocolate and top with a little coconut.

These healthy Coconut salted caramel bliss balls are really easy to make! Just a few pantry ingredients and you have yourself a great snack.

Ingredients
  • 1 cup (220g) dates, pits removed
  • ½ cup coconut cream
  • 2 ¾ cup (250 g) unsweetened shredded coconut and more for coating
  • pinch of salt
  • optional, freeze dried berry powder for color.

  1. Soak the dates in hot water for 10 minutes. Drain the water and add the dates to a high speed food processor. Mix until smooth then add the remaining ingredients except for the superfood powders. Pulse until just combined.

  2. Scoop out about 1 tablespoon and roll into balls. Coat them in coconut. If desired, mix in a little freeze dried berry powder with the coconut. This is optional but I love the flavour and color.

  3. Place in the fridge for at least 1 hour to set, then store in an airtight container in the fridge.
