This easy Vegan French Toast recipe is the perfect weekend breakfast! Fast and easy to make with only 5 ingredients (no banana), on the table in only about 20 minutes.

Ingredients
  • 1 cup almond milk or plant basted milk of choice
  • 2 tablespoon ground flaxseed
  • 1 teaspoon cinnamon or vanilla extract (or both)
  • pinch of salt
  • 6 thick slices of day old white bread
  • vegan butter or coconut oil for frying
Instructions
  1. In a wide and shallow bowl, whisk together milk, flaxseed meal and cinnamon. The cinnamon can take a little time to incorporate. Let the mixture rest for 5 minutes so the flaxseed can thicken, then stir well again.

  2. Heat a skillet over medium/high heat and add a little butter or coconut oil. Quickly dip the bread in the batter, flip and dip the other side. Do not leave the bread to soak for too long or it will start to fall apart.

  3. Fry the bread until golden brown, flip and repeat.

  4. Serve the French toast hot with toppings of choice. Some tasty options are: maple syrup, a dusting of powdered sugar and some fresh berries.
