Easy Vegan French Toast is the perfect weekend breakfast! Super easy to make and ready in only 15 minutes. Using ingredients you probably already have at home.
Made with only 4 ingredients:
- Almond milk, or other non dairy milk
- Flaxseed meal, this will thicken the batter
- Cinnamon, love this spice in my french toast!
- Bread, thick sliced day oil bread
Instructions
- In a wide and shallow bowl, whisk together all the ingredients except for the bread. The cinnamon can take a little time to incorporate. Let the mixture rest for 5 minutes so the flaxseed can thicken, then stir well again.
- Heat a skillet over medium/high heat. Melt a little butter and then quickly dip the bread in the batter, flip and dip the other side. Do not leave the bread to soak, just a quick dip!
- Fry the bread until golden brown, flip and repeat.
- Serve the Vegan French Toast with maple syrup, a dusting of powdered sugar and some fresh berries in desired. Enjoy!
Best breads for french toast
Use day old bread that is starting to go a little stale. Cut the bread in thick slices, this makes it easier to soak, cook and flip. I think we all had the accidental over soaking of french toast and ended up breaking the slice of bread when lifting it from the bowl to the pan… That’s why I like using a rustic bread or wheat bread for this vegan french toast, it holds up better. I would not recommend using soft or fresh white bread here, it soaks up a lot of moisture and the french toast can end up a little soggy in the middle. You don’t want that!
Toppings:
Serve the Vegan French Toast with maple syrup, a dusting of powdered sugar and some fresh berries in desired. I used strawberries because they are just getting into season here in Spain. Use your favorite!
Strawberry Chia Jam is also a great topping! Works well using frozen strawberries if they are not in season where you live.
Top Tips for making Vegan French Toast:
When dipping the bread, it is important to act quickly. Do not let the bread hang out and soak in the batter, it will just fall apart and get soggy. Dip both sides quickly and then directly to the hot pan. Fry up the french toast in a little vegan butter or coconut oil until golden brown on both sides.
