This easy Vegan French Toast recipe is the perfect weekend breakfast! Fast and easy to make with only 5 ingredients (no banana), on the table in only about 20 minutes.

French toast is such a great easy and fast breakfast to make. The perfect way to use up that day old bread that is starting to go a little stale. This recipe is super easy to ankle with just a few ingredient and no banana. Top with your favourite toppings, if berries are in season they taste great! Ingredients
This vegan fresh toast recipe is easy to make with only 5 ingredients listed below. For the full written recipe with the ingredient quantities, see the recipe card.
- Almond milk, or other plant based milk of choice.
- Flaxseed meal, this will thicken the batter for an egg like consistency.
- Cinnamon, some warming spice goes great with french toast! Another option is a little vanilla extract.
- Bread, thick sliced, day old vegan white bread of choice.
- Vegan butter or coconut oil for frying

Instructions
- In a wide and shallow bowl, whisk together the milk, flaxseed meal and cinnamon. The cinnamon can take a little time to incorporate. Let the mixture rest for 5 minutes so the flaxseed can thicken, then stir well again.
- Heat a skillet over medium/high heat. Melt a little vegan butter or coconut oil and then quickly dip the bread in the batter, flip and dip the other side. Do not leave the bread to soak for too long so it starts to fall apart.
- Fry the bread until golden brown, flip and repeat.
- Serve the French toast warm with toppings of choice. Enjoy!
Best bread for french toast
Use day old white bread that is starting to go a little stale. Cut the bread in thick slices, this makes it easier to soak, cook and flip. I think we all had the accidental over soaking of french toast and ended up breaking the slice of bread when lifting it from the bowl to the pan… That’s why using a rustic, thickly sliced bread is the best option this vegan French toast recipe, it holds up better. I would not recommend using a very soft or fresh white bread, it soaks up a lot of moisture and the french toast can end up a little soggy in the middle or fall apart.

Toppings:
This vegan French toast can be eaten as is or served with some toppings. Here are a few topping suggestions:
- Maple syrup
- Powdered sugar
- Fresh berries
- Yoghurt
- Whipped vegan cream or coconut cream
- Jam, store bothy or homemade like this Strawberry Chia Jam.
Substitutions and variations
- Gluten free – To make gluten-free and vegan French toast, use a bread that is certified gluten-free (and vegan)
- Milk – This French toast recipe uses almond milk, but another plant based milk of choice can also be used.
- Spice – A little added warming cinnamon adds a lot of flavor to this dairy free French toast, but instead of the cinnamon some vanilla extract also taste great and both can also be added!
- Bread – Instead of using white bread, a day old vegan brioche bread also tastes great.

Top Tips
When dipping the bread, it is important to act quickly. Do not let the bread hang out and soak in the batter for too long, it will just fall apart and get soggy. Dip both sides quickly and then directly to the hot pan. Fry up the french toast in a little vegan butter or coconut oil until golden brown on both sides.
