Healthy Vegan Apple Muffins

Fully loaded with apples and a delicious, crumble topping, you won’t believe these Healthy Vegan Apple Muffins are refined sugar free and made with simple, wholesome ingredients.

Ingredients
  • 1 ¼ cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1 tbsp flaxseed meal
  • cup coconut oil, melted
  • cup coconut sugar
  • 1 teaspoon vanilla
  • 1 cup quick cooking oats
  • 1 cups white whole wheat flour or all purpose flour
  • ½ cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon each of cinnamon and cardamom
  • pinch of salt
  • 1 ½ cups (200g) apples, peeled and finely chopped
Streusel Topping
  • 2 tbsp coconut oil, melted
  • ¼ cup quick cooking oats
  • 2 tbsp coconut sugar
  • 2 tbsp white whole wheat flour or all purpose flour
  • ¼ tsp cinnamon
Instructions
  1. Preheat the oven to 175C (350F) an line a muffin tin with paper liners.

  2. Add the almond milk, apple cider vinegar, flaxseed meal, oats cinnamon and cardamon. Let it sit for 10 minutes.

  3. Stir in the melted coconut oil, coconut sugar and vanilla. Then sift in the flour, almond flour, baing soda, baking powder, spices and salt. Add the chopped apples and fold together gently.

  4. Fill the muffin liners with the batter.

  5. Mix together the ingredients for the streusel topping and sprinkle evenly on top of the muffins.

  6. Bake for 17-20 minutes, depending on the size of the muffin and your oven.
