Ingredients
These Vegan apple cinnamon muffins are really easy to make. They had a mixture of quick cooking oats, white whole wheat flour and almond flour. That makes them delicious, moist and filling. Apple muffins
- Almond milk, or other plant based milk to keep these apple cinnamon muffins vegan.
- Apple cider vinegar, to make a vegan “butter milk”
- Flaxseed meal, helps hold the muffins together and adds nutrients.
- Coconut oil, melted, or other neural tasting oil like avocado oil.
- Coconut sugar, or light brown sugar.
- Vanilla extract
- Quick cooking oats
- White whole wheat flour or all purpose flour
- Almond flour, or almond meal.
- Baking soda and baking powder, a mix of the two gives light and fluffy muffins.
- Spices, ground cinnamon and cardamom
- Salt, just a pinch to balance the flavours
- Apples, peeled and finely chopped
Streusel Topping
- Coconut oil, melted, or other neural tasting oil like avocado oil.
- Quick cooking oats, or rolled oats
- Coconut sugar, or light brown sugar.
- White whole wheat flour or all purpose flour
- Cinnamon

- 1 ¼ cup almond milk
- 1 tablespoon apple cider vinegar
- 1 tbsp flaxseed meal
- ⅓ cup coconut oil, melted
- ⅓ cup coconut sugar
- 1 teaspoon vanilla
- 1 cup quick cooking oats
- 1 cups white whole wheat flour or all purpose flour
- ½ cup almond flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon each of cinnamon and cardamom
- pinch of salt
- 1 ½ cups (200g) apples, peeled and finely chopped
- 2 tbsp coconut oil, melted
- ¼ cup quick cooking oats
- 2 tbsp coconut sugar
- 2 tbsp white whole wheat flour or all purpose flour
- ¼ tsp cinnamon

Preheat the oven to 175C (350F) an line a muffin tin with paper liners.

Add the almond milk, apple cider vinegar, flaxseed meal, oats cinnamon and cardamon. Let it sit for 10 minutes.

Stir in the melted coconut oil, coconut sugar and vanilla. Then sift in the flour, almond flour, baing soda, baking powder, spices and salt. Add the chopped apples and fold together gently.

Fill the muffin liners with the batter.

Mix together the ingredients for the streusel topping and sprinkle evenly on top of the muffins.

Bake for 17-20 minutes, depending on the size of the muffin and your oven.
