
These Mushrooms and green beans are packed with flavor from herbs, shallot and garlic. It is a wonderful side dish to any meal, and so easy to make in just one pan on the stove.
Melt the butter in a large skillet over medium high heat. Add the sliced mushrooms and shallots. Sauté for about 5-10 minutes, or until the onion is translucent and the mushrooms have softened and released liquids and are starting to brown.
Add the minced garlic, thyme, rosemary, salt and black pepper. Stir well and sauté for another minute or until fragrant. Remove the sautéed onions and mushrooms from the pan and set aside.
Add the green beans to the pan with the vegetable broth, cover and let simmer for 10 minutes.
Ones the green beans are tender, add the mushrooms and onions back to the pan. Stir together and serve immediately while hot.
