The fresh green beans are then added to the same pan, no blanching required. Just add a little vegetable broth, cover and let sauté for a few minutes then it’s ready to serve!

These sauteed green beans and mushrooms are easy to make, all you need are just a few ingredients, listed below.

- Cremini mushrooms, cleaned and sliced
- Butter, I prefer to use unsalted butter for this recipe so you can adjust the salt level at the end.
- Shallots, sliced
- Garlic, minced
- Spices, salt, ground black pepper, dried thyme and dried rosemary
- Green beans, fresh, not frozen, washed and ends trimmed .
- Vegetable broth, or water, to cook the green beans in to make them tender. The vegetal broth adds more flavor, but water can also be used.

Instructions
This mushrooms and green beans recipe is really easy and fast to make in just a pan on the stove. Follow the instruction below with step-by-step photos. For the full written instructions, see the recipe card at the bottom.
- Step 1: Sauté me mushrooms and shallots until the onion is translucent and the mushrooms have softened and released liquids, and is starting to brown.
- Step 2: Add the minced garlic, thyme, rosemary, salt and black pepper.
- Step 3: Stir well and sauté for another minute or until fragrant. Remove the sautéed onions from the pan and set aside.
- Step 4: Add the trimmed green beans to the pan with the vegetable broth, cover and let simmer for 10 minutes.
One the green beans are tender, add the mushrooms and onions back to the pan. Stir together and serve immediately while hot.
Hint: Saute the green beans until done to your liking. I like a little bite to them still, if you like them softer, sauté for a few more minutes.
Substitutions and Variations
- Mushrooms – instead of cremini mushrooms, you can use other mushrooms of choice.
- Herbs – Top this sautéed green beans recipe with some fresh chopped parsley or herbs like sage or thyme.
- Spicy – For a little spice, add some chili flakes to taste.
- Oil – Instead of butter, olive oil or avocado oil, is a great alternative.
- Onion – Another alternative to shallot is to use a small red onion or yellow onion.
- Cheese – Top these green beans and mushrooms with some freshly grated parmesan cheese, grated mozzarella or crumbled feta cheese.
- Vegan – To make this green bean recipe vegan, use a vegan butter or olive oil instead of the unsalted butter.

Storage
If you have any leftover mushrooms and green beans, place them in an airtight container or heavy duty ziplock bag. Store in the fridge for up to 4-5 days.

Cook the fresh green beans to your liking. I cook mine for around 10 minutes, depending on size. I love to leave them tender, but still with a little bite to them. If you like them softer, sauté for a few minutes more.

- 2 tablespoons butter
- 3 shallots, sliced
- 3 garlic cloves, minced
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 pound fresh green beans, washed and ends trimmed
- ½ cup vegetable broth or water

Melt the butter in a large skillet over medium high heat. Add the sliced mushrooms and shallots. Sauté for about 5-10 minutes, or until the onion is translucent and the mushrooms have softened and released liquids and are starting to brown.
