Oatmeal with sweet potato

This Oatmeal with sweet potato is super fast and easy to make in the microwave. Loaded with healthy ingredients and warming spices. Made in the microwave in less than 5 minutes, perfect quick breakfast that reminds me of warm sweet potato pie.

Ingredients
  • ½ cup cooked sweet potato, mashed
  • 1 banana, divided
  • ½-1 teaspoon cinnamon or pumkin spice
  • ½ cup (130 ml) quick cooking oats
  • ½ cup (130 ml) almond milk
  • 1 cup (240 ml) water
  • 1 tablespoon peanut or almond butter
  • 1 teaspoon maple syrup, or more to taste
  • Topping: banana slices, chopped nuts, seeds and maple syrup (optional)
Instructions
  1. In a microwave safe bowl, add half the banana (save the other half for topping) Mash half the banana well, then add the sweet potato and stir well.

  2. Add the rest of the ingredients to the bowl and stir well.  It will look lumpy but don’t worry, it will all come together after it is cooked.

  3. Microwave on high for 3-4 minutes, watching so it doesn’t boil over. (Microwave times will vary depending on wattage.)

  4. Carefully take out the bowl from the microwave, it will be hot. Stir the oatmeal well and let sit for 1 minute. If you think it is too thick, stir in a little more milk. Top with the reserved half banana, cut in slices, nuts, seeds and a drizzle of maple syrup is desired.
