Ingredients
This creamy sweet potato oatmeal recipe is healthy, and easy to make. All you need are just a few basic ingredients listed below.

Oatmeal
- Quick cooking oats, the perfect choice for this speedy carrot cake oatmeal recipe, the oats are cooked in the microwave in just a few minutes!
- Water
- Almond milk, or other milk of choice.
- Sweet potato, cooked and mashed. I recommend baking the sweet potato whole in the oven until soft and creamy. Let it cool, remove the skin and mash the sweet potato or purée it in a food processor.
- Maple syrup, or liquid sweetener of choice. Brown sugar is also a great alternative.
- Spices, a little cinnamon or pumpkin spice and a little salt, gives this sweet potato oats a great flavour.
- Peanut butter, or almond butter (optional). For an allergy friendly oatmeal, leave it out, or replace with sunflower seed butter.
Topping
The toppings suggested below are optional and you can use the ones you like. Or just eat the sweet potato oatmeal as is.
- Banana, the reserved half banana cut in slices.
- Chopped nuts, like pecans or walnuts (optional) or other nuts of choice. For an allergy friendly oatmeal, leave them out or replace with sunflower seeds.
- Peanut butter, a drizzle of peanut butter on top of the oatmeal tastes great and adds some protein to this breakfast.
- Maple syrup, to taste. Brown sugar is also a great alternative.

Instructions
- In a microwave safe bowl, add half the banana (save the other half for topping) Mash half the banana well, then add the sweet potato and stir well.
- Add the rest of the ingredients to the bowl and stir well. It will look lumpy but don’t worry, it will all come together after it is cooked.
- Microwave on high for 3-4 minutes, watching so it doesn’t boil over. (Microwave times will vary depending on wattage.)
- Carefully take out the bowl from the microwave, it will be hot. Stir the oatmeal well and let sit for 1 minute. If you think it is too thick, stir in a little more milk. Top with the reserved half banana and optional toppings listed above in the ingredients.
Hint: If you like a creamier oatmeal, add a little more almond milk to your preferred consistency after the oatmeal is cooked. Another great oatmeal recipe this Carrot cake overnight oats or these Sweet Potato Oatmeal Muffins.
Substitutions and Variations
- Sweet potato – instead of mashed sweet potato, pumpkin puree from a can also works well.
- Nut butter – this healthy oatmeal with sweet potatoes has a little peanut or almond butter added. For allergies, leave the nut butter out, or replace it with sunflower butter.
- Protein – for added protein, mix in 1 tablespoon of protein powder into the batter. Add a little more milk or water if the consistency is too thick.
- Gluten-free – Although oats are naturally gluten-free, they can contain traces of gluten. To ensure a gluten-free oatmeal, use a brand that is certified gluten-free.
- Sweetness – This sweet potato porridge recipe in not overly sweet. The sweet potato and banana adds a lot of natural sweetness. If you like a sweeter oatmeal, add a little extra maple syrup or brown sugar, to taste.

Top tip
This sweet potato oatmeal recipe uses a cooked, cooled and mashed sweet potato. If you want, this can also be replaced with canned pumpkin puree.
For a creamier texture oatmeal, stir in a little extra milk after cooking or top with some vanilla yoghurt.
Storage
This sweet potato oatmeal is a single serving recipe. It tastes best when eaten straight away. But if you have leftovers, you can store them in and airtight container in the fridge for up to 5 days. The cooked oatmeal will become thicker as it sits, so stir in some extra milk or water before reheating.
To reheat oatmeal leftovers, add them to a microwave safe bowl, then heat on high in 30 sec intervals until piping hot. Stir in a little milk or water as needed.
I don’t recommend freezing this oatmeal recipe.

- 1 cup (240 ml) water
- 1 tablespoon peanut or almond butter
- 1 teaspoon maple syrup, or more to taste
- Topping: banana slices, chopped nuts, seeds and maple syrup (optional)
