Fluffy Peach Pancakes full of sweet summer peaches. It's like eating a peach pie with crumble topping, for breakfast!

Ingredients
  • 1 cup all purpose four
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ cup milk
  • ½ cup greek yoghurt
  • 1 egg
  • 2 peaches, thinly sliced
  • butter for frying
Instructions
  1. Whisk together the egg, milk, yoghurt and vanilla extract in a mixing bowl.

  2. Sift in the dry ingredients and and stir until just combined. Be careful not to over mix the batter, then you will end up with dense and rubbery pancakes.

  3. In a large skillet, melt a little butter and arrange 3 slices of peaches in a circle. Pour about ¼ cup of the pancake batter over the peaches. Fry the pancakes over medium heat until the bottom is golden brown and bubbles start to form at the top, about 2-3 min. Flip and cook for about 1-2 min more until golden brown.

  4. Serve the pancakes with maple syrup and top with fresh peaches and healthy pecan granola if desired.
