Spicy Asian Salmon with Mango Salsa

Spicy Asian Salmon with Mango Salsa is one of my absolute favorite fish recipes. It is sweet and spicy and easy to make. Perfect for a weekend dinner and even for a dinner party, I have made it countless of times and everyone loves it.

Ingredients
  • 800 g salmon, cut i 4 pieces
Sauce
  • ½ cup sweet chili sauce
  • ¼ cups soy sauce
  • 1 lime, juiced
  • small piece ginger, peeled and grated
  • 2 garlic cloves, minced
  • 3 springs of cilantro, chopped
Mango salsa
  • 1 large mango, peeled and diced
  • ½ red pepper, chopped
  • ½ red onion, chopped and rinsed in cold water
  • 1 large avocado, peeled and diced
  • ¼ cup cilantro, chopped
  • ½ lime, juiced
  • 1 chili, deseeded and minced
  • 1 tablespoon olive oil
  • salt and black pepper to taste
Serving
  • cooked rice, sesame seeds and cilantro
Instructions
Salmon
  1. Preheat the oven to 150C (300F)

    Mix all the ingredients for the sauce in a bowl. 

    Put the salmon in an oven safe pan and cover with the sauce. Bake for about 20 minutes, be careful to over cook the salmon.

Mango salsa
  1. While the salmon is cooking, gently mix all the ingredients for the salsa. Salt and pepper to taste and let sit until the salmon is ready.

Serving
  1. Serve the salmon with rice and spoon over some of the sauce. Top with sesame seeds, cilantro and the mango salsa.
