Spicy Asian Salmon with Mango Salsa is one of my absolute favorite fish recipes. Easy to make and loaded with flavours. the salmon bakes in the oven and is slightly spicy, topped with a fresh and vibrant mango salsa. The perfect recipe for a weekend dinner or dinner party.
The sauce caramelizes in the oven and tastes amazing drizzled some over the rice. Make some extra while you are at it so you have some leftovers, trust me you will want leftovers!
I love the mango and avocado combo, it works so well with spicy foods. The recipe for the mango salsa can also be used in many other dishes. On tacos, fajitas, lettuce wraps or why not on a curry?
Ingredients

- Fresh salmon, cut i 4 pieces
- Sweet chili sauce
- Soy sauce
- Lime, juiced
- Ginger, peeled and grated
- Garlic cloves, minced
- Cilantro, chopped
Mango salsa
- Mango, peeled and diced
- Red bell pepper, chopped
- Red onion, chopped and rinsed in cold water
- Avocado, peeled and diced
- Cilantro, chopped
- Lime, juiced
- Chili, deseeded and minced
- Olive oil
- Salt and black pepper to taste
Serving
- Cooked rice, sesame seeds and cilantro

Instructions
Salmon
- Preheat the oven to 150C (300F)Mix all the ingredients for the sauce in a bowl. Put the salmon in an oven safe pan and cover with the sauce. Bake for about 20 minutes, be careful to over cook the salmon.
Mango salsa
- While the salmon is cooking, gently mix all the ingredients for the salsa. Salt and pepper to taste and let sit until the salmon is ready.
Serving
- Serve the salmon with rice and spoon over some of the sauce. Top with sesame seeds, cilantro and the mango salsa.

- 800 g salmon, cut i 4 pieces
- ½ cup sweet chili sauce
- ¼ cups soy sauce
- 1 lime, juiced
- small piece ginger, peeled and grated
- 2 garlic cloves, minced
- 3 springs of cilantro, chopped
- 1 large mango, peeled and diced
- ½ red pepper, chopped
- ½ red onion, chopped and rinsed in cold water
- 1 large avocado, peeled and diced
- ¼ cup cilantro, chopped
- ½ lime, juiced
- 1 chili, deseeded and minced
- 1 tablespoon olive oil
- salt and black pepper to taste
- cooked rice, sesame seeds and cilantro
