Spicy Asian Salmon with Mango Salsa is one of my absolute favorite fish recipes. It is sweet and spicy and easy to make.
The sauce caramelizes in the oven and tastes amazing drizzled some over the rice. This is a perfect recipe for a weekend dinner and even for a dinner party, I have made it countless of times and everyone loves it.
Make some extra while you are at it so you have some leftovers, trust me you will want leftovers!
I love the mango and avocado combo, it works so well with spicy foods. The recipe for the mango salsa can also be used in many other dishes. On tacos, fajitas, lettuce wraps or why not on a curry?

- 800 g salmon, cut i 4 pieces
- 1 deciliter (100 ml) 0,4 cups, sweet chili sauce
- 0,5 deciliter (50 ml) 0,2 cups, soy sauce
- 1 lime, juiced
- small piece ginger, grated
- 2 garlic cloves, minced
- 3 springs of cilantro, chopped
- 1 large mango, peeled and diced
- ½ red pepper, chopped
- ½ red onion, chopped and rinsed in cold water
- 1 large avocado, peeled and diced
- 0,5 deciliter (50 milliliter) 0,2 cups, cilantro, chopped
- ½ lime, juiced
- 1 chili, minced
- 1 tablespoon olive oil
- salt and pepper to taste
- rice, sesame seeds and cilantro

Preheat the oven to 150C (300F)
Mix all the ingredients for the sauce in a bowl.
Put the salmon in an oven safe pan and cover with the sauce. Bake for about 20 minutes, be careful to over cook the salmon.

While the salmon is cooking, gently mix all the ingredients for the salsa. Salt and pepper to taste and let sit until the salmon is ready.

Serve the Salmon with rice and spoon over some of the sauce. Top with sesame seeds, cilantro and the mango salsa.
