
One bowl Vegan Gluten-free Banana Bread, deliciously moist, lightly spiced and loaded with chocolate chips.
Preheat the oven to 350F (175C)
Line a bread pan with parchment paper and set aside.
In a mixing bowl, add the almond milk, chia seeds and quick cooking oats. Mix well and let sit for 10 minutes.
Add the mashed bananas, coconut oil, coconut sugar and maple syrup or honey. Stir well.
Add the rest of the ingredints, except for the chocolate chips, and stir until well combined. Fold in the chocolate chips and pour the batter in the prepared pan. Top with some oats and chocolate chips if desired.
Bake for about an hour, start checking at 50 minutes since all the ovens are different. Let cool for about 15 min in the pan and then remove to a cooling rack to cook completely before cutting.
