Easy, one bowl Vegan Gluten-free Banana Bread, deliciously moist, lightly spiced and loaded with chocolate chips.
I use 3 different flours in this vegan gluten free banana cake, gives it wonderful textures and flavors. I love adding almond meal in cakes and cookies. Keeps the cake moist and the texture and flavor is amazing. I also really like using oats, healthier then normal flour and adds great texture to this gluten free chocolate chip banana bread. Make sure to use certified gluten-free oats for a gluten-free cake. I use quick cooking oats because they have a finer texture.

Ingredients
Vegan and Gluten-free Banana Bread is easy to make and the ingredients are listed below.

- Chia seeds, they are high in fiber, antioxidants and protein. Also acts as a stabiliser to hold this banana bread together.
- Almond milk, or other plant-based milk of choice, preferably unsweetened.
- Quick cooking oats, make sure you use a certified gluten-free brand to keep this banana bread gluten-free
- Bananas, very ripe, the riper the better. They are sweeter and have a smoother texture
- Coconut oil, or other neutral tasting oil like avocado oil.
- Coconut sugar, it has a slight caramel flavour that goes so well in this bread. You can also substitute with brown sugar.
- Maple syrup, agave syrup or other liquid sweetener can also be used.
- Almond flour, almond meal can also be used for a little courser texture make sure that it is gluten-free
- Gluten free flour, use your favourite brand of pastry flour.
- Baking powder
- Cinnamon
- Salt, I always add a little salt to everything sweet. It really brings out the flavours
- Chocolate chips, I like to use a good quality dark chocolate chips. Use a vegan brand if you want to keep this gluten free chocolate chip banana bread vegan.

Instructions
These Vegan almond flour banana bread are easy to make in just one bowl. Follow the step by step photos below.

- In a mixing bowl, add the almond milk, chia seeds and quick cooking oats. Mix well and let sit for 10 minutes.
- Add the mashed bananas, coconut oil, coconut sugar and maple syrup or honey. Stir well.
- Add the rest of the ingredints, except for the chocolate chips, and stir until well combined. Fold in the chocolate chips and pour the batter in the prepared pan. Top with some oats and chocolate chips if desired.
- Bake for about an hour, start checking at 50 minutes since all the ovens are different. Let cool for about 15 min in the pan and then remove to a cooling rack to cook completely before cutting.
Substitutions and variations
- Nuts – Add some chopped walnuts, pecans or almonds for a little extra crunch and to turn this into a delicious gluten free banana nut bread.
- Chocolate – This recipe calls for vegan dark chocolate chips, but a chopped up chocolate bar can also be used. Milk chocolate chips is another great alternative for a sweeter Gluten free dairy free banana bread.
- Gluten-free – Oats are naturally gluten-free, but for gluten intolerance, make sure to use certified gluten free oat flour since it can contain traces of gluten.

- 2 tablespoon chia seeds
- 1 cup almond milk, or other plant-based milk
- 1 cup quick cooking oats, gluten-free
- 3 bananas, very ripe and mashed
- 3 tablespoon coconut oil, melted
- ½ cup coconut sugar or brown sugar
- 3 tablespoon maple syrup
- 1 ½ cups almond flour
- 1 cup gluten-free pastry flour
- 4 teaspoon baking powder
- 2 teaspoon cinnamon
- pinch of salt
- ½ cup vegan chocolate chips

Preheat the oven to 350F (175C)
Line a bread pan with parchment paper and set aside.
