Vegan Baked Oats with Strawberry is a healthy and easy breakfast! All you need are some basic pantry ingredients and fresh or frozen strawberries.

Ingredients
  • 1 ½ cups (135g) quick cooking oats
  • 150g (1 cup) strawberries, hulled and washed
  • 1 very ripe banana
  • ½ cup almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 tablespoon maple syrup (optional for extra sweetness)
Instructions
  1. Preheat the oven to 175C (350F) and lightly grease a pie pan

  2. Add all the ingredients in a blender and blend until smooth.

  3. Pour the batter in the prepared pie pan. Top with some sliced strawberries and a little oats if desired.

  4. Bake the oatmeal for about 20-25 minutes until set and slightly golden brown on the sides.

  5. Let it cool down a little and serve with a little maple syrup and yoghurt if desired.
