Strawberry vegan baked oatmeal is a healthy and easy breakfast! All you need are some basic pantry ingredients and fresh or frozen strawberries.

Vegan Baked Oats with Strawberry is such a great breakfast. Naturally sweetened with banana and strawberries, keeping it on the healthier side.
Another one of my favourites is Chocolate Baked Oats for all you chocolate lovers.
Ingredients:
- Quick cooking oats
- Strawberries, hulled and washed
- Banana
- Almond milk
- Vanilla extract
- Baking powder
- Maple syrup (optional for extra sweetness)

Instructions
Start by preheating the oven to 175C (350F) and lightly grease a pie pan. Mine was 20 cm (about 7,5-8 inches will work)
Add all the ingredients in a blender or food processor and blend until smooth.
Pour the batter in the prepared pie pan. Top with some sliced strawberries and a little oats if desired.
Bake the oatmeal for about until set and slightly golden brown on the sides.
Let it cool down a little and serve with a little maple syrup and yoghurt if desired.

Substitutions
- Oats – Quick cooking oats is used here, but any kind of oats can be used since they will be blended.
- Strawberries – Both fresh or frozen strawberries can be used in this baked oat recipe. If you use frozen, make sure that they are defrosted first.
- Gluten free – to ensure these baked oats are gluten free, make sure to use certified gluten free oats.
Mix-ins:
Here are some examples of mix in that pairs well with the strawberry flavour.
- Chocolate chips
- Chopped nuts
- Freeze dried strawberries, for that extra strawberry flavour and pink color
How to Store Baked Oatmeal
Baked oatmeal is best eaten straight out of the oven while it’s still warm. But it can also be made ahead of time.
If you have any leftovers, you can store it in an airtight container in the fridge for up to 4 days or you can freeze it for up to 2 months.
The leftover baked oatmeal can be eaten cold or reheated in the microwave on high until just heated through.
Top tip
If you like your oats oil the sweeter side, you can add 1-2 tablespoon of maple syrup. It all depends on the sweetness of your strawberries and banana.
For a more vibrant color in these Vegan baked oats with strawberry, add some freeze dried strawberries, some pink pitaya powder or some pink food color.

- ½ cup almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 2 tablespoon maple syrup (optional for extra sweetness)
