Place all the ingredients in a blender or food processor and blend until smooth, scraping down the sides as needed. Add more water if needed.

In a large skillet, heat 1 tablespoon of oil over medium hight heat, and fry the cubed halloumi until golden brown and crispy on the outside. Set aside while preparing the rest of the filling.

Add the remaining tablespoon of oil to the pan and sauté the chopped red pepper and grated carrot for a 5 minutes. Stir in the halloumi cheese and half the cashew sauce, stir and add a little more water if needed. Taste and add more soy sauce if desired.

Add 2-3 tablespoons of the filling to the prepared lettuce (depending on the size of the lettuce. Top with a drizzle of the cashew sauce, some chopped cashew nuts, and some of the optional chili, cilantro, sesame seeds and a squeeze of lime. Serve immediately with extra sauce on the side and enjoy!
