Fresh and easy Veggie Lettuce Wraps with Creamy Cashew Sauce that make a healthy, light lunch or crowd-pleasing appetizer. They are filled with lots of veggies, halloumi cheese and topped off with a creamy cashew sauce.

I just love asian lettuce wraps, what is not to love?!
The fresh crunch of the lettuce, the delicious filling and yummy sauce and eating with your hands and getting a little messy. It is kind of a requirement when you eat lettuce wraps! Just like these delicious Summer Rolls with Peanut Butter Sauce.

Ingredients
Listed below are the ingredients needed to make these cashew lettuce wraps. For the full ingredient measurements, scroll down to view the recipe card at the bottom of the page.
Creamy Cashew Sauce
- Cashew nuts, roasted, half for the sauce the rest for the filling
- Soy sauce, use normal or gluten free if needed
- Sweet chili sauce
- Lime, juiced
- Sesame oli
- Fresh ginger, grated
- Garlic, minced
- Water, as needed to thin out the sauce
Filling
- Halloumi cheese, cubed
- Olive oil, or neutral oil of choice
- Red bell pepper, chopped
- Carrots, peeled and coarsely grated
Assembly
- Lettuce, either iceberg lettuce or butter lettuce, leaves separated, rinsed and dried
- Red cabbage, shredded
- Topping: Chopped cashews, fresh chili or red pepper flakes, cilantro, sesame seeds and lime wedges for serving

How to make lettuce wraps
The filling and sauce can also be prepared ahead of time if you are panting to serve this vegetarian lettuce wraps recipe as an appetiser at a party.
Creamy Cashew Sauce
Place all the ingredients in a blender or food processor and blend until smooth, scraping down the sides as needed. Add more water if needed.
Filling
In a large skillet, heat 1 tablespoon of oil over medium hight heat, and fry the cubed halloumi until golden brown and crispy on the outside. Set aside while preparing the rest of the filling.
Add the remaining tablespoon of oil to the pan and sauté the chopped red pepper and grated carrot for a 5 minutes. Stir in the halloumi cheese and half the cashew sauce, stir and add a little more water if needed. Taste and add more soy sauce if desired.
Assembly
Add 2-3 tablespoons of the filling to the prepared lettuce (depending on the size of the lettuce. Top with a drizzle of the cashew sauce, some chopped cashew nuts, and some of the optional chili, cilantro, sesame seeds and a squeeze of lime. Serve the halloumi lettuce wraps with extra sauce on the side and enjoy!
Storage
Store the filling, sauce and lettuce in separate airtight containers in the fridge for up to 4 days. Reheat the filling in the microwave until hot and then assemble the butter lettuce wraps and enjoy!

- 1 Butter lettuce, leaves separated, rinsed and dried
- red cabbage, shredded
- Topping: chopped cashew nuts, fresh chili slices or red pepper flakes, cilantro, sesame seeds and lime wedges for serving
