Southwestern black bean burgers

These Southwestern black bean burgers are crispy on the outside and pack a punch of flavour! Full of black beans, corn and delicious spices.

Ingredients
  • ½ cups oats, quick oats or rolled oats (gluten-free if needed)
  • 1 can (400g) black beans, drained and rinsed
  • 2 garlic cloves, minced
  • 1 shallot, chopped
  • ½ lime, juiced
  • 1 teaspoon sea salt, or more to taste
  • 1 teaspoon each ground cumin and sweet paprika
  • ½ teaspoon cayenne pepper, or more to taste
  • 1 egg, for vegan use a flax egg
  • ½ cup corn, canned or frozen
  • oil for frying
  • For serving: Burger buns, lettuce, avocado, pickled red onions, chipotle mayo and cilantro for serving
Instructions
  1. To a food processor, add the oats and blend until they have a fine, flour like consistency.

  2. Add the garlic, shallot and spices, lime juice, egg, beans and pulse until roughly chopped. Finally add the corn and pulse until just blended, you don't want to break up the corn.

    Let the mixture sit for 10 minutes.

  3. Heat a big frying pan on medium hight heat. 

    Shape the mixture into 4-6 burgers, depending on how big you like them. Fry the burgers in oil for about 5 minuted per side until golden brown.

  4. Serve with burger buns, lettuce, avocado, pickled red onions, chipotle mayo and a little cilantro.
