Mexican Black Bean Burger

These Gluten free black bean burgers are crispy on the outside and pack a punch of flavour! Full of black beans, corn and delicious Mexican spices.

You can adjust the spiciness to your liking here, I like it flavorful but not too spicy. But hey, if you like it really spicy, bring it on and add a little more chilly or a lot!

This recipe comes together easily in the food processor.

Mexican Black Bean Burger

Ingredients you need to make these Gluten free black bean burgers:

  • Oats, use certified gluten free oats to keep these burgers Gluten-Free
  • Black beans, I use canned but you can also use soaked and boiled black beans.
  • Garlic
  • Shallot
  • Lime, juiced
  • Sea salt
  • Ground cumin and sweet paprika
  • Cayenne pepper, to taste
  • Egg, for vegan use a flax egg
  • Roasted red peppers, I use a small can  
  • Carrots, peeled and grated
  • Corn, I use a small can  
  • Olive oil for frying
  • For serving: Burger buns, lettuce, avocado, pickled red onions, chipotle mayo and cilantro
  • Instructions:

    Add the oats to a food processor and blend until it has a flour consistency.

    Add the garlic, shallot and spices and pulse until chopped. Then add the lime juice, egg (or flax egg), beans and roasted red peppers, pulse until roughly chopped.

    Finally the corn and the carrot and pulse until just blended, you don’t want to break up the corn. Let the mixture rest.

    Heat a big frying pan on medium hight heat. Shape the the mixture into 6-7 burgers, depending on how big you like them. Fry the burgers in oil until golden brown.

    Serve with burger buns, lettuce, avocado, pickled red onions, chipotle mayo and a little cilantro. Enjoy!

    These Gluten free black bean burgers are crispy on the outside and pack a punch of flavour! Full of black beans, corn and delicious Mexican spices.

    Servings: 6
    Ingredients
    • 1 Cup oats
    • 1 can (400g) black beans, drained and rinsed
    • 2 garlic cloves
    • 1 shallot
    • ½ lime, juiced
    • 1 heaping tsp sea salt
    • 1 tsp each ground cumin and sweet paprika
    • ½ teaspoon cayenne pepper, or more to taste
    • 1 egg, for vegan use a flax egg
    • ½ cup roasted red peppers, drained
    • 100 g carrots, peeled and grated
    • 1 small can (160g) corn, drained
    • oil for frying
    • Burger buns, lettuce, avocado, pickled red onions, chipotle mayo and cilantro for serving
    Instructions
    1. Add the oats to a food processor and blend until it has a flour consistency. Add the garlic, shallot and spices and pulse until chopped. Then add the lime juice, egg, beans and roasted red peppers, pulse until roughly chopped. Finally the corn and the carrot and pulse until just blended, you don’t want to break up the corn.

      Let the mixture sit for 10 minutes.

    2. Heat a big frying pan on medium hight heat. 

      Shape the the mixture into 6-7 burgers, depending on how big you like them. Fry the burgers in oil for about 5 minuted per side until golden brown.

    3. Serve with burger buns, lettuce, avocado, pickled red onions, chipotle mayo and a little cilantro.

      Enjoy!
