These Southwestern black bean burgers are crispy on the outside and pack a punch of flavour! Full of black beans, corn and delicious spices.

This recipe comes together easily in the food processor. You can adjust the spiciness to your liking here, I like it flavourful but not too spicy. But hey, if you like it really spicy, bring it on and add a little more chilly or a lot!
Serve these burgers up with a side of Black bean and corn salad with avocado or these Baked sweet potato wedges. Why not with some Spicy Roasted Red Pepper Hummus for dipping on the side!

Ingredients
The ingredients needed to make these southwest black bean burgers are listed below.

- Oats, use quick oats or rolled oats. Oat flour also works great. Use certified gluten free oats if needed to to make these burgers Gluten-Free
- Black beans, One can of beans that have been drained and rinsed. You can also use homemade, boiled black beans.
- Garlic
- Shallot
- Lime, juiced
- Spices: salt, Ground cumin, sweet paprika, Cayenne pepper, to taste
- Egg, for vegan use a flax egg
- Corn, I use a small can
- Olive oil for frying
- For serving: Burger buns, lettuce, avocado, pickled red onions, chipotle mayo and cilantro

Instructions:
Add the oats to a food processor and blend until it has a flour consistency.
Add the garlic, shallot and spices and pulse until chopped. Then add the lime juice, egg (or flax egg), beans and pulse until roughly chopped.
Finally the corn pulse until just blended, you don’t want to break up the corn. Let the mixture rest.
Heat a big frying pan on medium hight heat. Shape the mixture into 4-6 burgers, depending on how big you like them. Fry the burgers in oil until golden brown.
Serving suggestions
- Serve with burger buns, use store bought or homemade. Gluten free if needed.
- Lettuce of choice
- Tomato slices
- Slices of avocado or guacamole
- Pickled red onions, or sliced red onions
- Avocado Green Goddess Dressing, Chipotle mayo or sauce of choice
- A side of Baked sweet potato wedges or Mexican street corn pasta salad.
Can Black Bean Burgers be baked in the oven?
Yes they can be baked instead of fried in a frying pan. Brush the black bean burgers with a little oil and place on a parchment paper lined baking tray. Preheated the oven to 375°F and bake for about 10 minutes or until golden on the outside. Flipping the burgers half way if desired.
How to store black bean burgers
These burgers can be stored in an airtight container in the fridge for about 4 days. Keep all the toppings and sauce separate.
You can also freeze the black bean burgers. I recommend layering them with parchment paper in-between each patty, or wrapping them in plastic wrap to keep them from sticking together and it will be easy to defrost one at a time if needed. Freeze for up to 3 months.

- 1 can (400g) black beans, drained and rinsed
- 2 garlic cloves, minced
- 1 shallot, chopped
- ½ lime, juiced
- 1 teaspoon sea salt, or more to taste
- 1 teaspoon each ground cumin and sweet paprika
- ½ teaspoon cayenne pepper, or more to taste
- 1 egg, for vegan use a flax egg
- ½ cup corn, canned or frozen
- oil for frying
- For serving: Burger buns, lettuce, avocado, pickled red onions, chipotle mayo and cilantro for serving

Add the garlic, shallot and spices, lime juice, egg, beans and pulse until roughly chopped. Finally add the corn and pulse until just blended, you don't want to break up the corn.
Let the mixture sit for 10 minutes.
