Sun dried tomato vinaigrette

This Sun dried tomato vinaigrette is creamy and packed with flavor. It is bright, a little tangy and garlicky, and has a lovely umami flavor from the sun dried tomatoes. Tastes great with any salad, pasta salad or drizzled over grilled summer vegetables. Super easy and fast to make with just a few ingredients.

Homemade dressings are easy to make and healthier than the store bough kind. Making your own dressing gives you the opportunity to blend the flavours to your taste. And it is super easy too!

This sun dried tomato dressing loaded with bold flavours. It is a little tangy from the lemon juice and it has a lovely freshness from the basil. The sun dried tomatoes gives this salad dressing a lovely umami flavor.

Ingredients

The ingredients to make this sun dried tomato vinaigrette recipe are listed below.

The ingredients in small bowls.
  • Sun dried tomatoes packed in oil, drained and oil reserved to use in this vinaigrette.
  • Fresh basil, this herb is such a nice flavour combination with the sun dried tomatoes. 
  • Oil, use the reserved oil from the sun-dried tomatoes, or olive oil.
  • Lemon juice, freshly squeezed juice from a large lemon.
  • Garlic, gives this dressing a punch of flavour.
  • Maple syrup, to balance out the acid from the lemon juice and the sun dried tomatoes.
  • Dijon mustard, just a little adds a lot of flavor to this vinaigrette.
  • Spices, sea salt, ground black pepper and optional red chili flakes for a little heat.
  • Water, to thin out the vignette.

Making this creamy sun dried tomato vinaigrette is fast, and super easy. Just follow the step-by-step photos below.

Step 1, Add all the ingredients in a high speed blender.

Step 2, Process until smooth, scraping down the sides as needed.

Add a little more water for a looser consistency if desired. Taste the vinaigrette and add more salt and pepper if needed.

Hint: Serve with your favourite salad or pasta salad like this Red lentil pasta salad.

Substitutions and variations

  • Tomatoes – instead of sun dried tomatoes packed in oil, you can use dry ones from a bag. Soak them in hot water until soft before adding to the blender.
  • Basil – tomato and basil go so well together. The fresh basil will give this sun dried tomato salad dressing the best flavor, but frozen basil can also be used.
  • Spicy – for a spicier sun-dried tomato vinaigrette recipe, add more chili or a few dashes of tabasco to taste.
  • Lemon juice – Can be replaced with vinegar, either red wine, white wine, or apple cider vinegar.

Equipment

For this creamy sun dried tomato dressing, I have used a high speed blender. A food processor also works.

Storage

Store this sun dried tomato dressing in an airtight container. It will last in the fridge for up to one week.

Top tip

To make this sun dried tomato vinaigrette, I used sun dried tomatoes packed in oil. This oil is packed with flavor form the sun dried tomatoes and spices. Instead of discarding that oil, use it in the dressing instead of olive oil. It will add so much flavor!

Should I soak sun dried tomatoes before use?

Only is you are using sun dried tomatoes that aren’t packed in oil. This sun dried tomato dressing uses the ones packed in oil, so no need to soak them beforehand.

Do you use the oil in sundried tomatoes?

Yes! It is packed with flavor from the sun dried tomatoes and spices and this vinaigrette recipe uses the oil they come marinaded in.

Can you eat sun-dried tomatoes straight from the jar?

Yes, if they are packed in oil, they are ready to use.

What are sun dried tomatoes?

Sun dried tomatoes are ripe tomatoes that have been dried in the sun or an oven, they are sweet, tangy, and chewy. The tomatoes shrink when dried because they loose almost all the water content. Perfect addition to salads and pasta dishes.

Ingredients
  • ½ cup sun dried tomato in oil, drained and oil reserved
  • ¼ cup fresh basil leaves
  • ¼ cup reserved oil from the sun-dried tomatoes, or olive oil
  • 1 lemon, juiced
  • 1 garlic clove, minced
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon dijon mustard
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon red chili flakes, optional
  • ½ cup water, or more if needed to reach desired consistency
Instructions
