Today I wanted something fast, healthy and filling for breakfast. Avocado toast with scrambled eggs is the perfect start to the morning.
Everyone has their favorite version of eggs, mine are scrambled or an omelet. The first time I had avocado toast with scrambled eggs was at this cute little cafe when my husband and I were on vacation in Valencia. If you haven’t been to Valencia i definitely recommend it!
This was one of those rare occasions, having a weekend away on our own and a late, uninterrupted breakfast after taking a long walk through the beautiful city. All you parents out there know what I am talking about!
We stumbled on this cafe just as the sky opened and the rain poured down. I saw avocado toast on the menu and decided to give it a try. Love at first taste!
The eggs were full of fresh herbs and so creamy, prefect with the avocado. So of course I wanted to recreate it back home. This is my version of it. I added tomato and arugula, for me it just makes the perfect toast and the arugula adds a peppery taste that just tops it off.
This was my first attempt to make an avocado rose, it wasn’t hard just a little fiddly. If you want to try making one yourself you can find a tutorial here
I will definitely attempt making avocado roses again, practice makes perfect!
But sliced avocado will taste just as great or you can mush it up and smear it on the bread. I used a whole grain bread, feel free to use your favorite type of toast. This is what I had at home but I also love to make this with a good slice of sourdough bread.
- 2 eggs
- splash of milk or cream
- 1 tablespoon mixed fresh herbs
- salt and pepper to taste
- 2-3 tomatos slices
- ½ avocado
- 1 toast, buttered
- small handful of arugula

Mix together the eggs, milk and spices in a bowl. Sauté in butter over medium low heat stirring while it cooks. Butter the toasted bread and top with arugula, tomatoes, eggs and avocado. Salt the avocado if desired.
Serve immediately and enjoy!
