This Grilled Pineapple with Macadamia nuts and Coconut ice cream is a great summer dessert. Sweet, juicy pineapple, crunchy macadamia nuts and creamy refreshing coconut ice cream topped with a little drizzle of honey.
It is really easy to make and will bring a tropical vibe right to your own back yard.
I have been dreaming of making this dessert ever since we were in Hawaii on vacation. I just could not get enough pineapple there. And macadamia nuts, yum!

- 1 Pineapple, sliced
- handful of macadamia nuts, roasted and chopped
- coconut ice cream
- 6 teaspoon honey
- mint, optional

Pre heat the grill or grill pan on medium high heat. Slice the pineapple in thick slices and grill until it has nice char marks about 2-3 minuted per side.

Plate the pineapple with a scoop of coconut ice cream, top with a teaspoon of honey and a sprinkle of macadamia nuts.
