One of my favorites is this easy and delicious Harvest Salad recipe with Apple, Celery and Avocado. Crisp lettuce, apple and celery mixed with creamy avocado and salty feta cheese topped with crunchy sunflower seeds and a delicious honey mustard vinaigrette.
This is the season for everything apples, I like to incorporate apples in savory dishes as well as desserts. This apple avocado salad is full of flavor and crunchy veggies. I love this combination!
This autumn harvest salad is super easy and fast to make. Another of my favourite salads is this Mediterranean black bean salad or this fresh Quinoa salad with pumpkin.

Ingredients
All that’s needed to make this fresh and tasty Harvest Salad recipe are just a few simple ingredients. Take a look at the ingredient list below.

Salad
- Head of lettuce, rinsed and dried. Use your favourite, I’ve used a butter lettuce here.
- Celery stalks, sliced
- Avocado, sliced
- Apple, sliced (I used Gala)
- Sunflower seeds, roasted and salted
- Feta cheese, crumbled
Dressing
- Fresh lemon juice
- Apple cider vinegar
- Honey
- Dijon mustard
- Olive oil
- Sea salt and pepper to taste

Instructions
Making this healthy apple avocado salad is fast and easy. For the full instructions see the recipe card at the bottom.
- In a small bowl, stir together all the ingredients for the salad dressing. Salt and pepper to taste.
- Arrange the lettuce leafs on a large serving platter. Top with the celery, apple, avocado and feta cheese. Drizzle with the dressing and sprinkle the sunflower seeds on top, serve immediately and enjoy!
Substitutions and Variations
- Lettuce – Use the lettuce of your choice, I used butter lettuce but other great options are romaine lettuce, ice berg lettuce or baby spinach.
- Vegan – use vegan feta cheese and maple syrup instead of honey to make this salad vegan.
- Onions – Add some red onion or Pickled Red Onions.
- Peppers – Add some chopped bell pepper, either red, yellow of orange bell peppers can be used. Some canned roasted red peppers also tastes great.
- Apple – Use a sweet and crispy apple like gala. The apple can also be replaced with pear.
- Cheese – Instead of feta cheese, crumbled or fried goat cheese is a great option.
- Grains – Add some cooked rice, quinoa, couscous, farro, or barley to this fall harvest salad.
This salad in lightly coated in a zesty vinaigrette style dressing. If you like a lot of dressing I recommend that you double the recipe.
A great way to serve this salad is with some freshly baked bread like this Cranberry Walnut Bread and some creamy Lemon Dill Hummus.
Storage
This Harvest Salad tastes best eaten straight away. The dressing will cause the lettuce and veggies to wilt and go soggy and watery. If you have leftovers, it’s best to store the dressing separate from the salad. Pack up the salad and dressing in 2 separate airtight containers and store in the fridge for up to two days.
Salad does not freeze well so I don’t recommend freezing leftovers.
Top tip
If you want to prepare this Harvest Salad ahead of time, mix the dressing and store that in a small airtight container. Chop the lettuce and all the veggies and store them in separate containers. I don’t recommend chopping the avocado until right before serving because it will go brown.
When ready to serve, mixed the prepared lettuce, veggies and dressing.

- 3 tablespoon olive oil
- sea salt and pepper to taste
