After our wonderful vacation in the US and eating waaaaay too much candy and treats it is nice to be back in my own kitchen. But we are all missing the Peanut butter cups we had over there. So I decided to make some Homemade Peanut Butter Cups and they turned out great!
This recipe only requires 4 ingredients and is easy to make! And the best part is that you don’t need to turn on your oven in this heat and can store them in the fridge or freezer for a cold treat. I used a little honey to sweeten them instead of regular sugar so they are healthy-ish. It is still chocolate. But they are small and sometimes you just need a little chocolate in your life… Or at least I do! It is still summer vacation after all!
Spoon the melted chocolate in the muffin liners and push it up the edges a little to form a chocolate cup to place the filling in. When you spoon in the filling tap the tray gently an the counter to level the filling. Then toping with the final layer of chocolate make sure the chocolate goes all the way out to the edges to form a lid.
I toped them with some crunchy, salty peanuts, totally optional but tastes totally awesome!
If you choose to top them with chopped peanuts (with I highly recommend) do this as soon as you added the chocolate so they stick and don’t just fall off.

- 200 g dark chocolate, divided and chopped
- 140 g creamy peanut butter
- 40 g honey
- 2 teaspoon coconut oil, divided
- 10 g rosted and salted peanuts, chopped (optional)

Line a mini muffin tray with 16 paper liners.
In a microwaveable bowl add half the chocolate and 1 teaspoon coconut oil. Microwave on hight for 30 seconds, stir and if not completely melted microwave for another 30 seconds.

Divide the chocolate in the muffin liners and push it up the edges a little.
Place it in the freezer for 15 min.

In a microwaveable bowl add the peanut butter and honey for 30 seconds. Stir and spoon on the chocolate bottoms. Freeze for another 15 minutes.

Melt the remaining chocolate and coconut oil like before and using a small spoon, cover the peanut butter. Top with the chopped peanuts (optional) and place back in the freezer for 15 minutes or until firm.
Store in the fridge or freezer.
