Blueberry Oatmeal Mug Cake, a single-serving microwave recipe that is ready in just 5 minutes! Full of healthy ingredients and sweet, juicy blueberries, like starting your day with dessert that is actually good for you.

If you’re in a rush in the mornings, but still want a healthy, filling breakfast this recipe is the perfect thing!

Ingredients
- Banana, very ripe, mashed
- Quick cooking oats, they have a finer texture then rolled oats and cook quickly in the microwave. Can also be replaced with oatmeal flour.
- Milk, of your choice, I used almond milk
- Egg, or for a vegan option, use a flax egg.
- Baking powder, to give it a lighter texture.
- Vanilla or cinnamon, choose your favourite flavor to go in the mug cake or add both!
- Salt, just a pinch to enhance the flavours.
- Honey or maple syrup, optional for a sweeter mug cake.
- Blueberries, fresh or frozen. Some to go inside the mug cake and a little extra for topping.

Instructions
- In a large microwave safe mug, add the banana and mash well.
- Add the oats, milk, egg, vanilla, baking powder, salt and honey or maple syrup (if using sweetener) Stir well until everything is incorporated. Gently fold in the fresh or frozen blueberries.
- Cook on hight heat in the microwave for 2-3 minutes or until set. Top with more blueberries, yoghurt and some maple syrup if desired.

Substitutions and Variations
- Nuts – Add some chopped nuts for some crunch and extra protein.
- Protein – for added protein, mix in 1 tablespoons of your favourite protein powder with an extra tablespoon of milk.
- Gluten-free – Although oats are naturally gluten-free, they can contain traces of gluten. To ensure a gluten-free dish, use certified gluten-free oats.
- Sweetener – This oat mug cake recipe is not overly sweet. Most of the sweetness comes from the ripe bananas. For a sweeter dish add some maple syrup or honey, or other liquid sweetener or brown sugar can also be used.
- Vegan – for a vegan mug cake recipe, use a plant based milk and replace the egg with a flax egg.
- Berries – Use fresh or frozen blueberries or other berries like raspberries or blackberries.

Storage
This recipe makes one portion and tastes best when eaten straight away. If you have leftovers, they can be stored in an airtight container or ziplock bag in the fridge for up to 4 days.
Eat leftovers cold or reheat in the microwave. Serve with some vanilla yoghurt and toppings of choice.

- ¼ cups milk of your choice, I used almond milk
- 1 egg
- ½ teaspoon baking powder
- ½ teaspoon vanilla or cinnamon
- pinch of salt
- 1-2 teaspoon honey or maple syrup, optional
