We love Mexican food in our family and the most requested recipe is fajitas and tacos. This Vegetarian Fajitas with Hallomi recipe is my absolute favorite way of enjoying fajitas! They are super delicious, packed with veggies, the salty hallomi and the vibrant fresh guacamole all work together so well. Finger licking good!
I used different colored peppers for this recipe but if you have a favorite color you can stick to just that one. The zucchini might not be a common ingredient but give it a try, it tastes amazing in fajitas!
Top with my fool-proof, Perfect Guacamole recipe. Perfect is a strong word, but for me it is the perfect recipe. Creamy, chunky avocado, pungent garlic and fresh lime juice all perfectly blended. Goes great with the salty hallomi cheese.

- 1 package, 250g hallomi cheese, sliced
- 2 tablespoon oil, divided
- 1 red onion, sliced
- 2 bell peppers, red and yellow, sliced
- 1 zucchini, halved on the length and sliced
- 2 tablespoon fajita spice
- 1 package soft tortilla bread
- guacamole, creme fraise or sour cream, cilantro and chili for serving

Heat the oil over medium hight heat in a pan and add the onion, pepper and zucchini. Fry for a few minutes while stirring until the veggie has some color and start to soften. Add the fajita spice, stir well and fry for a couple minutes more, stirring occasionally. Set aside and keep warm

Fry the hallomi cheese in the rest of the oil until golden brown on both sides.

To assemble the fajitas:
Add the veggies and the cheese and top with home made guacamole, cilantro, sliced chili for a little of extra heat and a drizzle of creme fraise or sour cream.
