This Apple pie baked oats recipe is really easy to make, all you need are a few basic ingredients. It makes a great meal-prep for the whole week.

- Rolled oats, or old fashion oats, they hold their shape and create a great texture in these vegan baked oatmeal.
- Pecans, fir a great crunch and great flavor. Other nuts like almonds or walnuts can also be used.
- Flaxseed and Chia seeds, mixing in some flaxseed and chia seeds in the apple pie baked oats will add a creamy texture and extra nutrients, it will also help hold it together when baked. They are high in fibre, antioxidants and protein.
- Baking powder, just a little makes a big difference in texture.
- Cinnamon, apple an cinnamon are such a great combination. Apple pie spice can also be used.
- Salt, a little adds a lot of flavor to this baked oatmeal.
- Almond milk, or other paled milk like oat milk.
- Apple sauce, or grated apple

Baked apple oats is really fast and easy to make. Just follow along with the step-by-step photos below.

To a mixing bowl, add the rolled oats, pecans, flaxseed, chia seeds, baking powder, cinnamon, and salt.
Add the almond milk, apple sauce, maple syrup, and vanilla and stir very well.
Fold in the chopped apple and dates. Pour the mixture into the prepared baking dish.
Spread to an even layer and top with some extra chopped apples and pecans.
Let your vegan baked oatmeal cool down for a few minutes before cutting into pieces and serving with a little yoghurt and a drizzle of maple syrup.
Hint: Pack up any leftovers and place in freezer friendly ziplock bags for a great weekday breakfast. Just take out as needed and reheat in the microwave.

- Dates – Can be replaced with other dried fruit like raisins, cranberries or apricots.

- 2 cups rolled oats
- ½ cup pecans roughly chopped
- 2 tablespoon flaxseed
- 2 tablespoon chia seeds
- 1 teaspoon baking powder
- 1 tablespoon cinnamon
- ¼ tsp. salt
- 1 ¾ cups almond milk
- ½ cup apple sauce
- ¼ cup maple syrup
- 2 teaspoon vanilla extract
- 2 medium gala apples diced
- ⅓ cup chopped dates or raisins

Preheat the oven to 375F and lightly grease an 8×8 baking dish dish.

To a mixing bowl, add the rolled oats, pecans, flaxseed, chia seeds, baking powder, cinnamon, and salt.

Add the almond milk, apple sauce, maple syrup, and vanilla and stir very well.

Fold in the chopped apple and dates, pour the mixture into the prepared baking dish. Spread to an even layer and top with some extra chopped apples and pecans.
