Apple pie baked oats is the perfect warming and healthy breakfast. Super easy to make and filled with apple, cinnamon and crunchy pecans.

Baked apple cinnamon oats makes a great hot breakfast. Full of sweet apples and warming cinnamon spice. Baking oats gives them a wonderful, almost cake like texture. Enjoy it hot straight out of the oven, or make it as a meal-prep and reheat in the microwave. The baked oats can also be frozen and reheated for a quick and easy breakfast.

Ingredients

This Apple pie baked oats recipe is really easy to make, all you need are a few basic ingredients. It makes a great meal-prep for the whole week.

The ingredients needed to make this apple pie baked oats.
  • Rolled oats, or old fashion oats, they hold their shape and create a great texture in these vegan baked oatmeal.
  • Pecans, fir a great crunch and great flavor. Other nuts like almonds or walnuts can also be used.
  • Flaxseed and Chia seeds, mixing in some flaxseed and chia seeds in the apple pie baked oats will add a creamy texture and extra nutrients, it will also help hold it together when baked. They are high in fibre, antioxidants and protein.
  • Baking powder, just a little makes a big difference in texture.
  • Cinnamon, apple an cinnamon are such a great combination. Apple pie spice can also be used.
  • Salt, a little adds a lot of flavor to this baked oatmeal.
  • Almond milk, or other paled milk like oat milk.
  • Apple sauce, or grated apple
  • Maple syrup, adds a great flavor and sweetness to this dish. Other liquid sweetener, brown sugar or coconut sugar can also be used.
  • Vanilla extract, tastes great with the apple and cinnamon combo.
  • Gala apples, or other sweet apples.
  • Dates, ads a caramel flavour that goes so well in this dish. Raisins, cranberries or apricots can also be used.

Instructions

Baked apple oats is really fast and easy to make. Just follow along with the step-by-step photos below.

Step 1, the dry ingredients in a mixing bowl.

To a mixing bowl, add the rolled oats, pecans, flaxseed, chia seeds, baking powder, cinnamon, and salt.

Step 2, adding the wet ingredients.

Add the almond milk, apple sauce, maple syrup, and vanilla and stir very well.

Step 3, folding in the apples.

Fold in the chopped apple and dates. Pour the mixture into the prepared baking dish.

Step 4, putting the mixture in a baking pan.

Spread to an even layer and top with some extra chopped apples and pecans.

Let your vegan baked oatmeal cool down for a few minutes before cutting into pieces and serving with a little yoghurt and a drizzle of maple syrup.

Hint: Pack up any leftovers and place in freezer friendly ziplock bags for a great weekday breakfast. Just take out as needed and reheat in the microwave.

Substitutions and Variations

  • Dates – Can be replaced with other dried fruit like raisins, cranberries or apricots.
  • Applesauce – instead of applesauce, grated apple can be used.
  • Nuts – this baked oatmeal recipe uses pecans, but any nut of your choice works!
  • Protein – For an extra boost of protein, mix in 1 tablespoon of protein powder.
  • Gluten-free – Oats are naturally gluten-free, but can contain traces of gluten. To ensure this apple pie baked oats are gluten-free, only use certified gluten-free oats.

Storage

If you have any leftovers, you can store it in an airtight container in the fridge for up to 4 days. It also freezes well, pack the baked apple cinnamon oats in individual portions so they don’t stick together. This way it is easy to take out a single serving and reheat in the microwave.

Top tip

These apple pie baked oats tastes great served with some yoghurt and a drizzle of maple syrup. Can also be served with some cold milk and some crunchy granola.

Are baked oats as healthy as overnight oats?

Yes they are, baked oats and overnight oats contain similar ingredients and are both a healthy breakfast option.

What’s the difference between baked oats and oatmeal?

Baked oats are more cake-like and baked in the oven. Oatmeal is usually made on the stovetop and has a creamy texture.

Ingredients
  • 2 cups rolled oats
  • ½ cup pecans roughly chopped
  • 2 tablespoon flaxseed
  • 2 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • ¼ tsp. salt
  • 1 ¾ cups almond milk
  • ½ cup apple sauce
  • ¼ cup maple syrup
  • 2 teaspoon vanilla extract
  • 2 medium gala apples diced
  • ⅓ cup chopped dates or raisins
Instructions
  1. Preheat the oven to 375F and lightly grease an 8×8 baking dish dish.
  2. To a mixing bowl, add the rolled oats, pecans, flaxseed, chia seeds, baking powder, cinnamon, and salt.
  3. Add the almond milk, apple sauce, maple syrup, and vanilla and stir very well.
  4. Fold in the chopped apple and dates, pour the mixture into the prepared baking dish. Spread to an even layer and top with some extra chopped apples and pecans.

  5. Bake the oatmeal for 40-45 minutes, or until lightly golden brown and set.
  6. Let it cool down for a few minutes before cutting into pieces and serving with a little yoghurt and a drizzle of maple syrup.
