Add all the ingredients to a food processor and mix untill it formes a dough. I like to leave small pieces of mango and cashew for the texture.
Roll into balls and coat with coconut. Store in an airtight container in the fridge for a week.
Substitutions and variations
- Nuts – these mango energy balls use cashews, but other nuts can also be used but the result won’t be as smooth. Some good options are almonds, walnuts or hazelnuts.
- Melted chocolate – To make these into chocolate covered bliss balls, simply dip in melted chocolate and let set for 20 min in the fridge.
- Dried mango – If you can’t get ahold of dried mango, replaced with other fried fruit like, apricots, pineapple, cranberries, dried strawberries or raisins.
Equipment
Use a high speed food processor to make these mango coconut balls. If you do not have a food processor, a blender can be used on the chopping program.
Storage
These mango balls make a great grab and go snack. Store them in an airtight container in the fridge for up to 5 days.
They can also be frozen for up to 2 to 3 months. Let them defrost in the fridge, or in room temperature. Do not defrosting them in the microwave, they will melt!
