What is your idea of a perfect chocolate chip cookie? There are so many varieties out there and everyone has their go to recipe. I have to say that mine is this recipe of Chocolate strawberry cookies. They are crispy on the edges and soft and chewy inside and packed with lots of chocolate and spices of freeze-dried strawberries.

Chocolate strawberry cookies are crispy on the edges and soft and chewy inside and packed with lots of chocolate and spices of freeze-dried strawberries.
- 125 g butter at room temperature
- 70 g (½ cup) dark brown sugar
- 90 g (½ cup) sugar
- 1 egg
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla paste
- 210 g all-purpose flour
- ½ teaspoon baking soda
- 150 g good quality dark chocolate, chopped and ⅓ reserved
- 20 g freeze dried strawberries, chopped
- pinch of salt

Pre-heat the oven to 175C (350F)
Whisk the sugars and butter together until fluffy.
Add the vanilla, eggs and maple syrup/honey and mix until incorporated.
Mix the flour, baking soda and salt in a separate bowl and add to the butter mixture. Stir until just incorporated and fold in the chocolate and strawberries.

Roll balls and place on parchment paper lined cookie sheet. Top with reserved chocolate pieces and bake for 10-12 minutes.
