These gluten free and vegan cookie bars are soft and gooey, secretly healthy and filled with sweet summer cherries and lots of chocolate chips.
- 2 tbsp flaxseed meal
- 8 tbsp almond milk
- ½ cup homemade, or natural almond butter
- 4-5 tbsp maple syrup or honey for non vegan
- 4 very ripe bananas, mashed
- 2 tablespoon coconut oil, melted
- 4 cups oats, certified gluten free if necessary
- 1 cup cherries, pips removed and roughly chopped
- ½ cup chocolate chips

Preheat the oven to 180C (350F)
Line a 20×30 cm baking dish with parchment paper.

In a mixing bowl, stir together the flaxseed meal and almond mil and let it sit for 10 minutes to thicken.

Add the mahed bananas, almond butter, maple syrap and coconut oil and mix to well combined. Stir in the oats and then fold in the cherries and chocolate chips. Top with a little extra chocolate if desired.

Bake for 15-17 minutes, they should still be soft and gooey.
Let them cool down in the pan and ten trmove to cut in squears.
Store leftovers in an airtight container in the fridge for up to 4-5 days or freeze for longer.
