These cookies are easy to make.
These are the ingredients you will need to make these dairy and gluten free cookies:
- Almond flour
- Gluten free pastry flour
- Baking powder
- Cinnamon and cardamon
- Coconut oil, melted
- Maple syrup
- Clementine zest and juice
- Almond flakes and dark chocolate for topping
Instructions:
- Start by mixing all the dry ingredients in a mixingbowl. Then add the coconut oil, maple syrup or honey and clementine zest and juice. Mix until combined. Cover and let the dough rest in the fridge.
- Pre heat the oven and line a baking sheet with parchment paper. Roll about a tabelspoon of the dough into a ball and place on the baking sheet. Top with a little almond flakes and slightly flatten with your hand. Repeat until all dough is used.
- Bake in the oven until just done. They should still be soft in the middle and just set on the edges.
- Let cool and drizzle with melted chocolate if desired. Store in an airtight container for about 4-5 days. Enjoy!

- 1 cup (250ml) almond flour
- 1 cup (250ml) gluten free pastry flour
- ½ teaspoon baking powder
- 1 teaspoon each cinnamon and cardamon
- ¼ cup coconut oil, melted
- ¼ cup maple syrup or honey
- 1 clementine, zest and juice
- almond flakes and dark chocolate for topping

Start by mixing all the dry ingredients in a mixingbowl. Then add the coconut oil, maple syrup or honey and clementine zest and juice. Mix until combined.
Cover and let the dough rest in the fridge for 30 minutes

Pre heat the oven to 175C (350F)
Line a baking sheet with parchment paper. Roll about a tabelspoon of the dough into a ball and place on the baking sheet. Top with a little almond flakes and slightly flatten with your hand. Repeat until all dough is used.

Bake in the oven until just done, for about 6-9 minutes depending on your oven. They should still be soft in the middle and just set on the edges.
