This Vegan Apple Cake is easy to make, moist and super delicious! Sweet fall apples and almond flour keeps it moist and the caramel-flavored coconut sugar all comes together so well in this vegan cake.

Ingredients
These are the ingredients needed for this vegan apple cinnamon bread cake. For the full ingredient measurements, scroll down to view the recipe card at the bottom of the page.
- Almond milk, unsweetened or plant based milk of choice.
- Apple cider vinegar, this mixed with the almond milk makes a vegan butter milk
- Coconut sugar, I love using coconut sugar for the slight caramel flavour. You can also use brown sugar.
- Almond flour, gives this vegan apple cake a hint of almond flavour and also adds extra moisture.
- All purpose flour, if you want a gluten free option use a gluten free 1:1 pastry flour
- Baking powder and baking soda, a mix of both makes for the best texture.
- Coconut oil, gives the dough that “buttery” feeling, but without the butter! Any neutral flavoured oil, like grape seed or sunflower oil, can also be used.
- Spices, I use cardamon and cinnamon because they go so well with the apple flavor
- Apples, there is a shedded apple inside the batter as well as a topping, maximum apple flavour here!

Instructions
This vegan apple spice cake is really easy to make and loaded with apple flavor. Follow along with the instructions below.
Preheat the oven and grease a round baking pan with removable sides.
Mix the almond milk and apple cider vinegar and let it sit for about 10 minutes until it starts to curdle. Then add the melted coconut oil, sugar and shredded apple, stir well.
In a separate bowl, add all the flour, almond flour, spices, baking powder and baking soda and stir. Fold in the wet ingredients until just combined. Pour the batter into the prepared pan and top with sliced apples, slivered almonds and turbinado sugar. Bake for 40-45 minutes.
Let the cake cool completely before removing from the pan.
Substitutions and variations
- Apples – Use a sweet apple, here I have used these beautiful pink apples but any sweet apple like gala apples, can be used. Apple sauce can also be used instead of grated apple.
- Vanilla – Change the flavour and add some almond extract instead of the vanilla.
- Coconut oil – Can be substituted for a neutral tasting oil, like sunflower or avocado oil.
- Coconut sugar – It is a great refined-free option but can also be substituted with light brown sugar. The cake will be a little sweeter if using brown sugar.

Storage
This vegan applesauce cake can be stored in an air tight container or plastic bag in for about 4-5 days.
This vegan almond cake can can also be frozen. Place the cake in a ziplock bag and remove as much air as possible, freeze for 2-3 months. Let in defrost in room temperature before slicing.

- 1 cup almond milk
- 1 tablespoon apple cider vinegar
- 170 g (1 ¼ cup) all purpose flour
- 140 g (1 ½ cups) almond flour
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon each of cardamon and cinnamon
- 100 g (½ cup) coconut sugar or light brown sugar
- ⅓ cups coconut oil melted
- 1 (½ cup or 90g) small shredded apple
- 2 apples, sliced for topping
- ¼ cup slivered almonds
- 1 tablespoon turbinado sugar
