This healthy Açai Blueberry Oatmeal is loaded with Açai and blueberry flavor and has the most amazing, vibrant color. The the perfect healthy and warming breakfast bowl that’s super easy to make in just minutes in the microwave.
Who said you can’t eat healthy even if you don’t have a lot of time?!
This easy and quick bowl of warming blueberry oatmeal cooks in the microwave in less then 5 minutes and is filled with healthy ingredients. This recipe uses frozen blueberries because they are available all year round and budget friendly. Of coarse fresh blueberries can also be used when in season. Ingredients
This Açai Blueberry Oatmeal is really easy to make, these are the ingredients needed:
- Quick cooking oats
- Water
- Almond milk, or other plant milk of choice for a vegan blueberry oatmeal.
- Blueberries, I like to use frozen in these recipe but you can also use fresh blueberries in you like. If you use fresh berries, make sure to mash them up, no need to microwave them first.
- Açai powder, this can usually be found in the health section of the grocery store or order online.
- Vanilla extract, a hint of vanilla goes so well with the blueberry and açai.
- Maple syrup or agave syrup or other liquid sweetener can also be used.
Instructions:
To a microwave safe bowl, add the frozen blueberries and heat for about a minute on full effect until the blueberries are defrosted. If using fresh blueberries, skip this step and mash them with a fork in the bowl.
Add the remaining ingredients to the bowl with the blueberries and stir well. Place the bowl back in the microwave and for 3 minutes on full effect. Check it so the oatmeal doesn’t boil over.
Carefully take out the bowl, it can be very hot. Stir the blueberry oatmeal well, then let it sit for a minute and then stir again. For a creamier oatmeal, stir in a little more milk to desired texture.
Serve immediately and toppings of your choice.
Topping suggestions:
I really enjoy adding different toppings to this healthy blueberry oatmeal, so many wonderful combinations. Here are a few of my favourites.
- Fresh blueberries or other berries.
- Almonds or other chopped nuts gives the oatmeal a great crunch.
- Chia seeds or a mix of seeds.
- Cold milk of choice.
- Maple syrup, a drizzle tases great for a little added sweetness.
- Jam, a spoon full of this Forest Fruit Chia Jam
- Granola, yes it tastes really good on top of creamy oatmeal! Like this homemade Air Fryer Granola.
- Chocolate chips, or a little chopped chocolate or cacao nibs.
