Who doesn’t love eating cookie dough straight out of the bowl? I mean, that is the best part! This vegan, no-bake, healthy Almond Chickpea Cookie Dough recipe is a great alternative for those cookie dough cravings.
I have seen so many chickpea cookie dough recipes out there so I decided to give it a try. The kids were a little skeptical and to tell the truth, so was I. But it tastes great!
Now, this will not taste exactly the same as notmal cookie dough, it is not as sweet or buttery. So remember you’re making this so you can eat it all in one go if you want to. Satisfy your sweet tooth without all the calories!
We experimented with different combinations and this recipe was everyones favorit. The texture is a little grainer then a traditional cookie dough. If you want a smoother consistency you can peel the chickpeas before blending them.
Ingredients
- Chickpeas, drained and rinsed (peel them for a smoother texture)
- Creamy almond butter
- Maple syrup
- Vanilla extract
- Almond milk
- Cocoa powder
- Chocolate chips or chopped dark chocolate
Instructions
Combine all the ingredients except the chocolate chips in a food processor and blend until smooth. If you want a smoother texture you can peel the chickpeas first.
Add dough to a bowl and stir in the chocolate. Chill in the fridge for about an hour.
Storage
Store this Chickpea Almond Cookie Dough in an airtight container in the fridge for up to 5 days.
Substitutions and Variations
Almond butter – Can be substituted with another kind of nut butter, like peanut butter or allergy friendly sunflower seed butter.
Maple syrup – can be replaced with another liquid sweetener like agave or for non vegans, honey can be used.
Mix-ins – Add some chopped nuts like almonds, for a little extra crunch and flavour.

Det går bra att byta ut lönnsirap mot tex honung om du inte är vegan eller ta agave sirap. Berätta gärna vad du tyckte sen!

I love this recipe! I swapped for mini chocolate chips because the regular/larger sizes can be harder to chew after the dough congeals in the fridge. I prefer Enjoy Life mini semi-sweet chips because other mini chocolate chip brands were sickly sweet, this one was just right.
