These Banana oatmeal chocolate chip muffins are healthy, easy to make in one bowl and loaded with flavour. I have added some sweet summer strawberries that lifts the flavour in these delicious muffins. They are easy to make and really easy to eat too! Perfect to grab for breakfast or snack on the go. And the good thing is that they are good for you!

Tips for making these muffins:
This recipe doesn’t have a lot of added sugar to keep them on the healthier side. The sweetness comes from the bananas, that’s why its so important that they are really pipe, creamy and sweet when you use them for baking. You want lots of brown spots and a soft, creamy texture to them. That makes all the difference in the flavour and texture in these muffins and it’s also a great way to use up all those bananas that are getting over ripe.
What Oats to use in this muffin recipe:
In these muffins I have used bothwhrle oats and oat flour. I like to use quick cooking oats for this recipe because they have a finer texture and keeps them soft and fluffy. If you don’t have oat flour it is really easy to make at home. Just add your oats to a blender and mix until it has a flour consistency. Measure out what you need for these muffins and then keep the rest in an airtight container for the next time. Ingredients you need to make these muffins:
- Bananas, very ripe and sweet, you want the brown spots!
- Eggs, I always use organic. If you are vegan, replace the eggs with 2 flax eggs.
- Greek yoghurt, use unsweetened and full fat. For a vegan version, use a dairy free greek style yogurt
- Coconut sugar or light brown sugar
- Quick cooking oats
- White whole wheat flour or all purpose flour
- Oat flour
- Baking soda
- Vanilla paste, or vanilla extract can be used
- Salt
- Fresh strawberries, hulled and chopped into small pieces
- Chocolate chips, I prefer dark chocolate in this recipe
How to make these Banana oatmeal chocolate chip muffins with strawberries:
Start by preheating you oven and line a muffin pan with paper liners, optional to coat them with cooking spray or a little oil.
Take out a mixing bowl, add the peeled bananas and mash well. Add the eggs, greek yoghurt, sugar and quick cooking oats to the bowl and stir well. Let this mixture sit for 10 minutes to thicken. Do not skip this step! The batter needs to rest in order to get fluffy and moist muffins.
After 10 min, add the rest of the ingredients except strawberries and chocolate. Stir to combind and then gently fold in the strawberries and chocolate chips. Fill the prepared muffin liners and top with a sprinkling of oats and a few chocolate chips.
Bake the muffins until a toothpick inserted into center comes out clean, remember all ovens are different so start checking your muffins before the 20 minutes are up.
Let the muffins cool down for a few minutes before removing them from the muffin tin. Ones they are completely cool, store in an airtight container for 5 days in room temperature. You can freeze them for longer.

- 2 medium very ripe bananas, mashed
- 2 eggs
- ½ Cup greek yoghurt, unsweetened and full fat
- ⅓ Cup coconut sugar or light brown sugar
- ½ Cup quick cooking oats
- ½ Cup white whole wheat flour or all purpose flour
- ½ Cup oat flour
- 1 teaspoon baking soda
- ½ teaspoon vanilla paste or vanilla extract
- pinch of salt
- ½ Cup strawberries, chopped
- ¼ Cup chocolate chips

Preheat the oven to 175C (350F)

Line a muffin pan with paper liners, optional to coat them with cooking spray or a little oil.

In a bowl, mash the bananas and add the eggs, greek yoghurt, sugar and quick cooking oats. Stir to combind and let sit for 10 minuts to thicken. Do not skip this step, it is important to get high, moist muffins.

After 10 min, add the rest of the ingredients except strawberries and chocolate. Stir to combind and then gently fold in the strawberries and chocolate chips. Fill the prepared muffin liners and top with a little oats.

Bake the muffins for about 20 minutes, remember all ovens are different so start checking your muffins after 18 minutes.

Store in an airtight contaniner for 5 days.
