Roasted strawberries

These Roasted strawberries really brings out the flavor and natural sweetness of the strawberries. They are super easy to make and tastes great as topping for the morning oatmeal, yoghurt or pancakes. Or with some ice cream for an easy dessert.

I love to make these oven roasted strawberries in the summer when strawberries are in season, but you can also make it all year round using frozen strawberries. This recipe is super easy to make with only 3 ingredients! Strawberries baked in the oven really brings out their natural sweetness and flavour.

Use these baked strawberries as a topping to this vegan almond cake or serve with these Banana oatmeal pancakes or why not as a topping to these Nutella Overnight Oats.

Ingredients

All you need for making these roasted strawberries are 3 ingredients listed below. For the full ingredient measurements, scroll down to view the recipe card at the bottom of the page.

  • Fresh strawberries, cleaned, the top removed and cut in half
  • Maple syrup, or honey for on vegan
  • Vanilla extract, vanilla bean powder or one vanilla bean cut in half lengthwise and seeds scraped out.

Instructions

Making roasted strawberries is really easy and fast. See the step-by-step instructions with photos below. For the full written instructions, see the recipe card at the bottom.

Step 1: Add the strawberries into a bowl with the maple syrup and vanilla. Gently toss to combine.

Step 2: Arrange the strawberries in one layer onto a baking tray.

Step 3: Bake them until they are soft and the juice thickens a little.

Hint: Depending on how sweet and juicy the strawberries are, add a little more maple syrup to taste.

Substitutions

  • Fresh strawberries – if strawberries aren’t in season, you can use frozen strawberries instead.
  • Maple syrup – instead of natural maple syrup, other liquid sweetness can be used instead. Good options are agave or honey for non vegan.
  • Vanilla extract – the vanilla extract can be replaced with vanilla bean paste or a whole vanilla bean cut in half down the middle and the seeds scraped out.

Storage

This recipe makes a small batch of oven roasted strawberries. Store them in an airtight container in the fridge for about one week.

They can also be frozen for about 3 months in an airtight container or freezer friendly ziplock bag.

FAQ

Can I use frozen strawberries?

Yes! Frozen strawberries works great in this recipe. They might not be as sweet as summer fresh ones, add more maple syrup to taste.

Can I use honey instead of maple syrup?

Yes, honey works great in this recipe!

Ingredients
  • 500 g (2 cups) strawberries, hulled and cut in half (frozen works too)
  • 2-4 tablespoon maple syrup
  • 1 teaspoon vanilla extract
Instructions
  1. Add the strawberries into a bowl with the maple syrup and vanilla.
  2. Gently toss to combine and the arrange them in one layer onto a parchment paper lined baking tray.
  3. Bake them for about 20-25 min until they are soft and the juice thickens a little.
  4. Let them cool down completely before adding to an airtight jar.
