I love to make these oven roasted strawberries in the summer when strawberries are in season, but you can also make it all year round using frozen strawberries. This recipe is super easy to make with only 3 ingredients! Strawberries baked in the oven really brings out their natural sweetness and flavour.

Ingredients

- Fresh strawberries, cleaned, the top removed and cut in half
- Maple syrup, or honey for on vegan
- Vanilla extract, vanilla bean powder or one vanilla bean cut in half lengthwise and seeds scraped out.

Instructions

Step 1: Add the strawberries into a bowl with the maple syrup and vanilla. Gently toss to combine.
Step 2: Arrange the strawberries in one layer onto a baking tray.
Step 3: Bake them until they are soft and the juice thickens a little.
Hint: Depending on how sweet and juicy the strawberries are, add a little more maple syrup to taste.
Substitutions
- Fresh strawberries – if strawberries aren’t in season, you can use frozen strawberries instead.
- Maple syrup – instead of natural maple syrup, other liquid sweetness can be used instead. Good options are agave or honey for non vegan.
- Vanilla extract – the vanilla extract can be replaced with vanilla bean paste or a whole vanilla bean cut in half down the middle and the seeds scraped out.

Storage
This recipe makes a small batch of oven roasted strawberries. Store them in an airtight container in the fridge for about one week.
They can also be frozen for about 3 months in an airtight container or freezer friendly ziplock bag.

- 500 g (2 cups) strawberries, hulled and cut in half (frozen works too)
- 2-4 tablespoon maple syrup
- 1 teaspoon vanilla extract

Add the strawberries into a bowl with the maple syrup and vanilla.
