This Strawberry Almond Tart (Vegan and Gluten-free) is easy to make and loaded with sweet strawberry flavour. The almond crust comes together fast and easy, no need to chill or pre-bake.
I love a good tart or pie, but sometimes they are really time consuming with a lot of steps involved. This healthier Strawberry Almond Tart is both Vegan and Gluten-free and really easy to make! No need to chill the dough, roll it out with a rolling pin or pre-bake it. Just mix the dough together and press it out with your fingers, add the strawberry filling and bake. It is that easy!

Ingredients:
Crust:
- Almond flour, almond meal can also be used for a little courser texture.
- Oat flour, use a certified gluten-free brand if you want to make this tart gluten-free.
- Baking powder, just a little helps with the texture of the crust.
- Salt, just a pinch to balance the flavours.
- Coconut oil, I use an organic brand.
- Almond butter, preferable all natural or try this homemade Pecan Almond Butter the added hint of pecan flavour goes so well in this tart.
- Maple syrup, agave syrup or other liquid sweetener can also be used. For non vegan you can use honey.
Filling:
- Fresh strawberries, frozen can also be used but then I recommend to add an extra tablespoon of corn starch because they will release a lot more liquid.
- Corn starch, to thicken the strawberry juices.
- Maple syrup, agave syrup or other liquid sweetener can also be used.
- Sliced almonds for topping.

Instructions:
Crust:
- Preheat the oven and lightly grease a tart dish with removable sides.
- Mix the dry ingredients in a bowl and then add the solid coconut oil, almond butter and honey and mix. Using your hands is easiest. Press the dough evenly in the prepared tart pan.
Filling:
- In a large bowl, add the sliced strawberries, the maple syrup and corn starch. Gently stir together carful not to break the strawberries.
- Spoon into the prepared crust and leave any juices in the bowl, so the crust won’t become soggy.
- Top with sliced almonds and bake. Check the tart half way and lightly cover with foil if it is getting too dark.
- Let cool and then serve with coconut whipped creme or ice cream.

- 1 cup almond flour
- ½ cup oat flour
- 1 tsp baking powder
- pinch of salt
- 4 tbsp coconut oil
- 2 tbsp creamy almond butter
- ¼ cup maple syrup
- 3 cups sliced strawberries
- 1 tbsp corn starch
- 1 tbsp maple syrup
- 1-2 tablespoon sliced almonds for topping

Preheat the oven to 180C (350F)
Lightly grease a 22 cm (9 inch) tart dish with removable sides.

Mix the dry ingredients in a bowl and then add the solid coconut oil, almond butter and maple syrup. Mix well, using your hands is easiest.

Press the dough evenly in the prepared tart pan.

In a large bowl, add the sliced strawberries, the maple syrup and corn starch. Gently stir together carful not to break the strawberries.

Spoon into the prepared crust and leave any juices in the bowl, so the crust won't become soggy.

Top with sliced almonds and bake for about 40 minutes. Check the tart half way and lightly cover with foil if it is getting too dark.

Let cool and then slice and serve with coconut whipped cream or ice cream if desired.
