Ingredients
This vegan carrot cake oatmeal recipe is healthy and easy to make. All you need are just a few basic ingredients listed below.

Oatmeal
- Quick cooking oats, the perfect choice for this speedy carrot cake oatmeal recipe, the oats are cooked in the microwave in just a few minutes!
- Water
- Almond milk, or other milk of choice.
- Grated carrot, grate them fine or courser for a little more texture. I have graded them fine for this recipe.
- Maple syrup, or liquid sweetener of choice. Brown sugar is also a great alternative.
- Spices, a mix of cinnamon, ground ginger, nutmeg and a little salt gives this carrot cake oats a great flavor.
- Raisins (optional ) other dried fruit like cranberries or chopped apricot also tastes great.
- Chopped pecans or walnuts (optional) or other nuts of choice. For an allergy friendly oatmeal, leave them out or replace with sunflower seeds.
Topping
- Vanilla yoghurt, or yoghurt of choice. A thicker consistency works best.
- Chopped pecans or walnuts (optional) or other nuts of choice. For an allergy friendly oatmeal, leave them out or replace with sunflower seeds.
- Cinnamon, just a little sprinkle makes a great topping.
- Maple syrup, to taste. Brown sugar is also a great alternative.

Instructions
This carrot cake oats recipe is really fast and easy to make. Just follow along with the step-by-step photos below.

Add all the ingredients to a large microwave safe bowl.
Stir well then cook on hight heat in the microwave.
When the oatmeal is cooked, take it out from the microwave carful not to burn your fingers. Stir the oatmeal well and let it sit for a minute and then stir again.
Top with the some vanilla yoghurt, chopped walnuts, a dusting of cinnamon and a drizzle of maple syrup.
Hint: If you like a creamier oatmeal, add a little more almond milk to your preferred consistency after the oatmeal is cooked.
Substitutions and Variations
- Raisins – Can be replaced with other dried fruit like chopped dates, cranberries or apricots.
- Carrots – instead of grated carrots, grated apple or zucchini can also be used.
- Nuts – this carrot cake oatmeal recipe uses walnuts, but any nut of your choice works! For allergies, leave the nuts out or replace them with sunflower seeds.
- Protein – for added protein, mix in 1 tablespoon of protein powder into the batter. Add a little more milk or water if the consistency is too thick.
- Gluten-free – Although oats are naturally gluten-free, they can contain traces of gluten. To ensure a gluten-free oatmeal, use a brand that is certified gluten-free.
- Sweetness – This carrot cake oatmeal recipe in not overly sweet. For a sweeter breakfast, add in a little extra maple syrup or brown sugar, or top with extra maple syrup.

Storage
This carrot cake oatmeal recipe makes one portion and that comes together really quick and easy. It tastes best when eaten straight away. But if you have leftovers, you can store them in and airtight container in the fridge for up to 5 days.
The longer the cooked oatmeal sits, the firmer consistency it will get. Stir in some extra milk or water.
To re-heat leftover oatmeal, heat in a microwave safe bowl, heat in 30 sec intervals until piping hot. Stir in a little milk or water as needed.
I don’t recommend freezing this oatmeal recipe.

Top tip
For a creamier texture carrot cake oatmeal, stir in a little extra almond or oat milk after cooking. If you add too much liquid before cooking it can easily boil over in the microwave.

Yes, when you make homemade oatmeal in the microwave you can control the sugar and use all natural ingredients. Quick cooking or instant oats, have the same nutritional benefits as regular oats.
In this recipe I use a mixture of both. Milk gives it a creamier texture then only water. But if using only milk, the oatmeal tend to boil over in the microwave. I find that using both milk and water, gives the best result.

- ½ cup (125ml) almond milk
- ½ cup (125ml) grated carrot
- 1-2 tablespoon maple syrup
- 1 teaspoon cinnamon
